Tart Saison was open fermented then barrel-aged in a neutral French oak puncheon with Brettsnomyces and Lactobacillus for one year. Finally, it was refermemted on apricots and bottle conditioned former an additional six months, developing notes of pluot, pineapple, ripe mango, and white peach, with a lightly tart, quenching finish.

2024 750mL bottle from the brewery, drunk 6/6/25.
Hint of haze in this apricot-maize body. Large, apricot head, slowly to ring.
Beautiful, vivacious fruit with some oaky strength to it and rich, maltiness balancing the big lacto character. The fruit is done incredibly well, and there's funk and rustic grain, with nothing weird nor any acetic character.
Excellent fruit in the mouth with big oak, big tart acids and a rich, malty body to help soak it all up. Definitely tends acidic and reminds heavily of something like Fuzzy, which is high praise.

750 ml picked up at the brewery. Aroma is funky yeast, musty character and mild apricot. Flavor has a mild lingering tartness throughout the beer. Oak with apricot is here but certainly not the main character. Decent funk. Pretty well developed brew. Very nice surprise!
