Brewed with 2-Row, Roasted Barley, Chocolate and De-bittered Chocolate malts, they also used lactose (milk sugar), for a bit of sweet character (lactose is not fermentable by most yeasts). Northern Brewer hops were used for bittering, and a light dose of Willamette was used late in the boil for aroma. A Belgian Stout yeast strain was used to ferment this first-in-the-region creation.

Sample, bottle, from and with Réjean Doiron, savoured on October 14 2015; eye: black, opaque, no effervescence, no head, no lacing; nose: roasted malt, roasting, coffee, light anise, slight dark chocolate; mouth: roasted malt, roasting, coffee, light anise, slight dark chocolate, lactic, finale in roasting with presence of chocolate, medium body, average carbonation, slick texture; overall: correct FRANÇAIS Échantillon, bouteille, de et avec Réjean Doiron, savourée le 14 octobre 2015; œil : noire, opaque, pas d’effervescence, pas de mousse, pas de dentelle; nez : orge torréfiée, rôti, café, léger anis, très léger chocolat noir; bouche : orge torréfiée, rôti, café, léger anis, très léger chocolat noir, lactique, finale en rôti avec présence de chocolat, corps moyen, carbonatation moyenne, texture coulante; en résumé : correct

Bottle: Poured a light black color stout with an off-white foamy head with good retention. Aroma of light coffee notes and milk chocolate. Taste is a mix of chocolate notes, with light dry coffee with light yeasty notes. Body is creamy and light with good carbonation. Interesting and well brewed even though this is not a favorite style of mine.

A deep dark brown stout with a thin brown head. In aroma, nice sweet fruity chocolate malt with light licorice, herbaceous character, phenolics and light alcohol warmth. In mouth, a sweet powdery character, light bean notes, light mint, strange. Bottle from Halifax via Rejtable.
