Diving Bell is Galway Bay’s tip of the hat to the Scottish Wee Heavy. A beer style well matched for the stormy days & nights they endure in Galway. Brewed with a base of Scotland’s finest Golden Promise malt, heaps of crystal malt & a touch of roast barley. Followed by a long, cool fermentation with Scottish ale yeast before being racked to Nicaraguan Rum Casks on Valentine’s Day, where it has rested for seven months. Silky smooth with big notes of molasses, stone fruit & a little spice. Diving Bell is a sweet, malty beast with a beautifully delicate structure.

A nice beer for this sort of weather. Sticky, fairly sweet and with plenty of rum going on. Woody, caramel and very raisiny, a hint of tannins give some acidity to counter the sweetness. Bit boozy, in an enjoyable way. Nothing super complex, but wintery.

500ml bottle at home. Pours a lovely maroon to brown colour with a light brown to tan head. Nose is dark fruit, freshly baked brown bread, caramel, some nutty character, slight bit of milk chocolate. Flavour is same, lovely complexity and depth. In an age of beers devoted to love of the hop, this is a special love note to malts.
