Mottainai Sake Beer.

Mottainai (もったいない) is a Japanese term that conveys a sense of regret with regards to waste - for example, the expression "Mottainai!" is an exclamation for when something useful, such as food or time, is wasted, translating roughly as "What a waste!". This beer is a unique collaboration; a bringing together of two brewing methods, beer and sake.

A base beer was produced then kasu from our friends at Kanpai, added to ferment the sugars. Kasu, the "waste" product from brewing Sake contains rice, live yeast and koji. Bringing unique umami (savoury) and citrus notes, unfiltered, the beer has an orange hue and a dry finish.

15/9/2018. Bottle from Hoppily! Gusher! Pours cloudy orange gold with a large frothy off-white to grey head. Sake quite dominant in the aroma with light hops, fruit, light herb, spice and yeast. Moderate sweetness, medium to heavy bitterness. Moderate body, oily texture, average to soft carbonation. Quite sharp finish. Curious brew, it’s ok in small doses.

Flaska från London. Smak och doft av päron, sake, jäst, citrus med toner av gräs. Torr, lagom sötma, frisk, fin syrlighet. Gott!

Torrt och gräsigt, frisk lätt syrlig fruktighet med lite päron. Stram gräsbrand avslutning.

Hazy gold beer, big fluffy pale cream colour head. Light palate semi-dry, modest fine carbonation. Fluffy malts, swestish. Twangy sake yeast, some spice. Rice. Skewed floralness. Little dried fruits. Smooth dry finish. Interesting! Quite sake like and thus for me, a little was enough!

Bottle at home in London - picked up at the London Brewers' Market. Opens with a loud hiss, then pours lightly hazy orange-gold with a billowing, but thin, foamy white head. The nose has a bit of butterscotch, sake, vanilla, biscuits. Light to medium sweet flavour with more creamy butterscotch, maybe a hint of bile, simple white rice, more vanilla, nips of alcohol. Medium to full bodied, lightly oily, with lively, massaging carbonation. Finishes with some tangerine meringue, more vanilla and butterscotch, angel food cake, white bread. Quite an interesting beer. You definitely get sake characteristics coming through.
