750mL bottled Oct 25, 2023, drunk Jan 11, 2025.
Clear, bright blonde-golden. Small, white head.
Nose is beautifully full of dainty, fruity, mildly acidic brett. Not much of the honey, thankfully; just augmenting the peppery phenol of the Sacch and Brett. Biscuit and big Sacch saison yeast notes showing lovely funky, high mineral basement characters.
Very musty, mousey and with tart lemon (though not very acidic). Big Brett notes add lots of complexity and fun, slight medicinal, slight band-aid-like notes. Amply malty, but well-attenuated, and not over-attenuated texture. A bit mousey and weird to start but improves greatly as it warms/breathes.

750 ml bottle. Thanks to Clarkvv. Aroma is soft white wine, lemon juice and malt. Flavor is mostly the same. Pear is not really found. White wine, citrus acid, and a subtle sweetness. Mild oak. Pretty balanced.
Thanks Clark. Nice aroma, flavor, interesting beer.
