Cask (gravity) @ 32th Pigs Ear Beer and Cider Festival 2015, at The Round Chapel in Hackney, London, England. [ As Dominion Red Christmas ].Clear medium red amber color with a average, frothy - fizzy and open, good lacing, mostly lasting to diminishing, off-white head. Aroma is moderate malty, caramel, malt, dusty, nutmeg, cinnamon, clove, X-mas spices. Flavor is moderate to heavy sweet with a long duration, cinnamon, nutmeg, X-mas spices, herbal, spice dry. Body is medium, texture is oily to watery, carbonation is soft to flat. [20151202] 6-3-7-3-11

Pigs Ear Day 1. Cask. Hazy deep amber beer, bubbly pale cream colour head. Palate is light, semi dry and has modest fine carbonation. Thin caramel - toffee malts. Cinnamon and cloves. Ripe fruits includes some apple and orange. Semi dry finish. Christmas spiced nonsense but fine.

Cask at Pig’s Ear 2015. It pours murky red-brown with a decent beige head. The nose is soft, sweet, slightly tart, sour cherry, Christmas fruit cake, toffee, cinnamon and some tang. The taste is toasty, earthy, festive spice, wood, leather, some charred notes, umami, ashy and dirt with a pretty dry and spicy finish. Medium body and low carbonation. Too much dry cinnamon notes. Interesting, but far from refined.

Gravity at Pigs Ear ’15, 01/12/15. Reddish amber with a decent beige covering. Nose is spice, gingerbread biscuit, toffee, nutmeg, winter cheer. Taste comprises malt, gingerbread, spice rack, caramel, clove, toasted brown sugars. Medium bodied, moderate carbonation, semi drying close. Decent winter spiced affair ... good balance.

Cask at Pigs Ear 2015, day 1 - London. Pours unclear read-gold with a bubbly white head. Odd spices in the nose, some herbal tomato sauce. Light sweet flavor with harsh bitterness, herbal hops. Medium bodied with fine carbonation. Dry and bitter on the finish, with more herbs and spices, light ketchup, aggressive grass. Not very drinkable.
