The Cut series is Oak Theory aged on whole CO fruit, more than twice the amount of Fruit Stand. The Cut: Blackberry is 2 barrels of Oak Theory selected for their light funk and acidity and aged for a month on over 2 pounds of hand-picked blackberries from a secret location here on the Western Slope. We’ve been patiently holding onto these blackberries since July last year, just waiting for the perfect barrels to present themselves. We were very tempted to use them in Fruit Stand, but held off and waited for Oak Theory to come to fruition. We’re glad we did! Don’t think Blackberry Fruit Stand has enough fruit? This is for you.

Bottle at the brewery. Dark red to purple with white head. Fruity, intensive blackberries, funk, barnyard, some wood, very juicy. Medium to heavy sourness. Smooth. Great use of fruit.

From bottle. Hazy purple reddish color with off white head. Yeasty aroma, funky, barnyard notes, wood, tart fruity, berries and citrus. Light sweet and moderate acidic taste. Light to medium thin to oily body with soft carbonation.

Slight haze to this dark violet-to-burgundy beer. Violet-tinted, off-white head atop recedes steadily to a ring.
Lactic, Brett and blackberry acids are fairly-well homogenized and there's a lot of 'em! Fruit is excellent, authentic, well-presented, etc...and the nose shows no flaw or alcohol. Some light acetic components linger and as with other Casey beers, I'm struggling to get any differentiable "house" character or personality.
Quite sour in the mouth, with a strong lactic, moderate acetic, strong fruit and light-to-moderate Brett component. The execution on the beer is very nice, with ample, tight carbonation, good attenuation, good tannin structure from the barrel and bright, vivacious, enjoyable fruit. Sourness is pretty high, though that's fine with me. Pretty stereotypical American sour, albeit a nice one, though I wish Casey beers had something compelling or particularly interesting about them.

[ As Casey The Cut: Blackberry - (Triple Crown 4/21/16) ].
ABV: 5.0%. Clear medium red orange colour with a average, frothy, good lacing, mostly lasting, white to off-white head. Aroma is moderate malty, wheat, moderate yeasty, leather, funk, berries, blackberry. Flavor is moderate sweet and light to moderate acidic with a long duration, tart, funky, dry, berries, blackberry, oak - barrel. Body is medium, texture is oily to watery, carbonation is soft. Bottle thanks to @@ron! Shite,I didn’t realize this was such an esteemed beer when I opened it! My wife thought it was so so, for what its worth. I enjoyed the very hazy reddish pour, light off-white head and decent lacing. The aroma is a great mix of blackberries and lactic slightly cheesy funk. Flavor is light plus tart, blackberries, medium funk with a horseblanket note that reminds one of lambic in addition to a certain cheesiness. Some tannins from the barrels as well. Medium body, soft mouthfeel. Enjoyable.

Bottle shared at my pre-wedding bash with some other RB nerds. Pours a hazy, purplish appearance with a light brown head. The aroma is similar to Oak Theory with some lemon, lactic acid, funk, cheese, and oak. Along with that, there’s plenty of berries that aren’t overly powerful. The flavor again has Oak Theory forefront with complementary berries. Slight tannins / slightly seedy. Not burningly sour. Plenty of oak. Really enjoyable. Again, the fruit doesn’t completely dominate the flavor which is a breath of fresh air. One of the better fruit beers I’ve had in a while. I preferred this one to the Balaton Cherry Cut slightly but both were fantastic. Very good.
