Siphonneur was brewed in collaboration with Brussels café Le Barboteur for the occasion of their third birthday, an important beer bar located in an old library in Schaerbeek. Siphonneur is a light gold, crisp and crushable ‘Belgian Kölsch-Style Ale’ of 4.5% ABV, inspired by the top fermented but lagered hybrid beers produced around the German city of Cologne as defined by the Kölsch Konvention of 1986. It showcases a 100% pils malt base, Citra and Mandarina Bavaria hops and a subtle fruity yeast character.

Kölsch-style beer made by Siphon for the Barboteur in Schaarbeek near Brussels, an enthusiastic young craft beer pub I should revisit. Egg-white, creamy, papery lacing, stable head, hazy straw blonde-golden robe. Aroma of white bread, dry breakfast cereals, green apple peel, unripe banana, minerals, pear, straw. Restrained apple- and pear-like fruitiness, sourish effect due to strong, but for this style acceptable, minerally carbonation; slick cereally malt body with a white bread-like edge, quite soft, ending with a hoppiness reminiscent of wet grass, field flowers and damp straw, providing mild but effective bitterness. Balanced and technically flawless quencher, but hardly qualifying as a Kölsch, a very delicate style I have never seen imitated outside of the Cologne region in a credible way - and this is no exception, I'm afraid.
