The 2022 blend was constructed of saison fermented and aged in barrels which formerly held 'Big Gin.' This blend is largely comprised of saison brewed with spelt and saison brewed with spelt and oats.
This beer was refermented to condition in the bottle with raw honey from Cougar Canyon Apiary. Harvested in Chiliwist, Washington on 09/25/21.

Bottle. Pours hazy yellow, small white head, decent lacing. Aroma is gin, herbal, oak, lemon. Flavor is light tart, light funk, bright. Light body. Nice

750ml bottle pours out golden topped with a white head. Nose is nice complex funky sour tart notes lemon zest some gin spice. Taste is more of the nice complex notes barrel gin spice.

Bottle thanks to Rainer. Pours a hazy orange gold with medium white head that lasts. The aroma is floral, gin, earth, wood. Slick body, honey, gin, earth, light tartness, very nice.

Poured from bottle @ FHF 2022 (notes from Aug 06, 2022). Clear-ish yellow with white head. Light funk, gentle citrus and gin, not bad.

Hazy, nice gin character, kind of sprucey/piney. Lime maybe? That sort of thing. Similar palate of gin botanicals, rosemary. Tart, good balance. Kind of gruitish.

Bottle sample at Farmhouse Fest 2022, pours a cloudy bright yellow with a small white head. Aroma brings out spicy rustic saison yeast and oak. Flavour is rustic and complex, with light tartness, wild yeast, and oak. Finishes spicy, piney and oaky. Very good.
