Û baccarossa è una IGA con 10% di uva Centesimino del vignaiolo naturale Ancarani. Il mosto è stato sottoposto ad un ambiente fermentativo spontaneo proveniente dagli acini, oltre ad un inoculo di brettanomyces, per poi affinare per 6/7 mesi in botte con le bucce in macerazione.
Ne risulta una birra di colore rubino, con note intense di frutta rossa e corpo percepibile senza rinunciare a una presenza fresca, funky e speziata, il tutto arricchito dalla complessità conferita dal legno.

Draught @ Mig & Ølsnedkeren. Pours murky rusty brown with a tan head. Aroma of malt, wet wood, tart red grapes, light vinegar. Flavor is light sour, malt, red grapes, dark berries, wet wood, oak, little vinegar. Thin to medium body, average carbonation, dry and light acidic finish. 090422

Bottle with a cork! Pours a lovely deep ruby red, almost no head. Aroma is complex, barrel and grape, very vinous, wood, vanilla, raspberry, blueberry and blackberry notes. Medium to big body. Flavour is somewhat malty actually, but with a big punch of acidity, whilst not being overbearing due to a good amount of sweetness. Light funk. The grape comes through in a lovely way, loads of red berries, same three as in aroma. Nice complexity. Another amazing beer from Ca' del Brado and one of the best IGAs I've had.

16 September 2020. At Draft & Dreams, Bologna. Shared with the lovely Anke! Clear red, thin, frothy, off-white head. Aroma of cranberry, unripe raspberry, redcurrant, sour cherry, vinegar, wood, red grape. Taste has sour redcurrant, cranberry & cherry, a bit woody with low vinegar, soft bready & jam-like body. Dry, tart, woody, grape-like finish with more funky fruit. Medium body, oily texture, soft carbonation. Bit vinous, very fruity, mostly very nicely sour!

22-02-20 // taster from bottle at a guided tasting at Kuehn Kunz Rosen. Lots of fruit and wood. Brett forward as well. Balance could be a little better. Elements fighting each other. Wineous notes. Sour as well. Good though.
