This 2021 harvest beer was made through a native fermentation of Chardonnay grapes from French Creek Vineyard on the slopes of the Yakima River. The grapes from were destemmed and crushed and kept in contact with the skins for some time before being pressed and then blended with well aged spelt saison as well as saison brewed with wheat and oats.
This beer was refermented to condition in the bottle with raw honey from Cougar Canyon Apiary, harvest on Rattlesnake Point 10/01/2021.

Bottle shared at the CBJ tasting, group purchase, 15/11/23. Clear golden blonde topped with a white cap that thins to the edge. Nose is stone fruit esters, funk, herb, lemon balm, damp straw. Taste comprises damp straw, hay bale, barnyard nip, stone fruit, grass, hedgerow, lemon rind, white grape must. Medium bodied, fine carbonation, semi drying close with a restrained acidic flicker. Solid stuff.

Bottle shared at CBJ. Pours hazy gold with a thin head that fades. Aroma is funk, oak, white grape, hint of black pepper. Taste is funk, oak, gooseberry, white grape. Really well balanced and tasty. Great stuff

Craft Beer Junction bottle share, thanks to the team. A light haze on this gold beer, small pale cream colour head. Palate is light and semi dry, good fine carbonation. Light smooth malts, a light creamy sweetness. Plenty of Chardonnay, creamy and slightly tart at the same time. Mild citrus and a funky mildly tart finish. Interesting

Bottle shared at CBJ - cheers! Pours mostly clear yellow-gold with a small, creamy white head. Light to medium sweet flavour with notes of peach, mellow acidity, golden raisin, white wine. Medium bodied with massaging carbonation. Lightly warming finish, subtle lemony tang, a little pale wood. Delightfully drinkable.

Bottle shared at the craft beer junction bermondsey. Many thanks. A light hazed golden yellow coloured pour with a fading white head. Aroma is semi sweet, floral,, wine, dry wine, tangy, floral, pineapple, mellow funk, dry white wine. Palate is semi sweet, crisp, floral, pineapple, fine mellow carbonation. Nice.

Bottle split at a share. Cheers to Linz. Pours light hazed pale gold with dissipating white foam. Aroma: vinous, white grape, stone fruits, lemon zest, funk, oak. Taste: light tartness, mellow stone fruits, Chardonnay grapes, funk. Great balance. Medium body with spritzy carbonation. Glorious.

750ml bottle pours out hazy golden topped with a small fizzy head. Nose is deep in flavor stone fruit lemon zest grape oak wow. Taste is more of the nice complex notes oak grape stone fruit some funky notes.

Pale yellow, not much head. Lots of chard, light brett, wood, big sweet malt -the barrel really rounds this one out.

On tap at Brouwer's Cafe - 18th Anniversary event, pours a cloudy pale golden with a small white head. Aroma is full of mixed wild yeast, a touch of white wine, and plenty of oak. Flavour reveals a wonderful mixture of wild yeast and Chardonnay. Yeah, that's the best of both — wonderfully buggy, coherent mix of wild yeast, accentuated by tons of white wine presence. Lovely.
