During a trip to the Hair of the Dog Brewery in Portland, we came across a bounty of Heaven Hills Rye Whiskey barrels delivered straight from Kentucky. We couldn’t resist! A quick brewery tour soon morphed into packing the van with as many of these barrels as we could. Cavatica ended up hanging out in these barrels for six months in the Lovell Building Brewery. While people were playing shuffleboard and tossing bean bags next to the barrels, the Cavatica was soaking up smooth, oak-aged, warming rye whiskey. Tallboy can shared at a tasting, 6/8/15. Dark brown, medium sized fizzy tan head, good retention. Aroma of roasted malt, chocolate, whiskey, wood, caramel. The taste is roasted malt, raisin, dark chocolate, strong whiskey finish. Medium bodied, chewy, low carbonation, lingering bitterness.

Can shared at the Tuesday Night Horal Chugging Tasting - London. Big thanks to Colin and his hook-up for this rare can. Pours black-brown with a tight, tan froth head. Nose of creamy chocolate and lightly tangy dark fruits. Medium sweet flavor, a little boozy, with more creamy chocolate, ripe berries. Full bodied with fine to average carbonation. Moderate warmth to end with a bit more creamy chocolate, ripe berries, some roasted malts. Alright.

Can, thanks to Colin at the Tuesday Horal Chugging Tasting. It pours jet black with a thick tan head. The nose is roasty, toast, chocolate, earth, caramel, rocky road and cake. The taste is roasted malt, toast, dark fruit, plum, grape, raisin, mild acidity, light tang, decent bitterness, sweet whiskey and wood with a dry, roasty finish. Full body and average carbonation. Very drinkable for the style. Nice!

Craft Clerkenwell, Tuesday Horal Chugging Tasting, can with original credit to one of the PDX crew - Bird I seem to recall, 17/09/13. The rare one aongst the Cavaticas and the last in the trilogy for me ! Mid black with a moderately sized tan head. Nose is dark roast, bourbon notes, woody, cocoa, dark toffee. Taste comprises cocoa, bourbon and rye come through well, dark fruit and toffee notes. Medium bodied, soft carbonation, smooth on the palate, lightly warming alcohol in the finish. Nice impy.

Craft Clerkenwell. Tuesday Horal Chugging Tasting! Thanks to Colin for this rare piece of aluminum. Opaque dark brown beer with a good tan head. Light and airy palate, semi dry. Light tang on the dark malt and a nice chocolate streak. Touch of dark fruits. Mellow whisky and a litte barrel wood vanilla. Finishes airy and fluffy! Pretty good and pretty drinkable.

Draught. A rye note in the aroma with the smoke and roast. Slight smoky note in the flavour along with sugar and chocolate. Roasty finish.

On tap at Belmont Station Bier Cafe, pours black with a small tan head. Aroma of rye and whiskey upfront, atop dark fruits and some sweetness. Flavour is very potent, with notes of dried dark cherries, rye whiskey barrels, and a little molasses. Quite complex - the barrels are used very well, accentuating all the flavours without dominating the beer. The dark cherry presence is surprisingly high. Finishes on the cherries and light sweetness. Great stuff.
