To make Saison de Brett, we start with our La Saison des Fêtes that balances spicy French hops, aromatic European malt, and a unique Belgian yeast. Next we rack the beer into local red wine barrels, add a bit of wild Brettanomyces yeast, and age for 12 months. The result is a complex, funky beer that is amazing when released and will change in flavor if cellared properly.

Keg at the Atlas taproom, DC, 13/04/23. Dark reddish brown with a beige cap that clears to the edge. Nose is vinous, funk, tangy fruit rinds, grains, yeast esters. Taste comprises herb, yeast, red berry must, straw, damp hay, barnyard, apple skins, light fruit balsams. Medium bodied, fine carbonation, semi drying close spiked with modest brett and a light acidic rise. Decent.

Draft: Poured caramel orange brown with a lacing white head. Aroma is pungent fruit, funky tartish, vinegar. Taste is tart fruits, malty, funky, berries.

Tap at the brewery in Washington DC. A hazed dirty brown coloured pour with a halo of beige head. Aroma is bretty sour funk, green apple, vinegar, vinous funk. Flavour is composed of semi sweet berries. Palate is semi sweet, tart and tangy, highish carbonation. Nice berry funk, prickly.

Prune and grapefruit Bretta. Dark brown pour with decent head. Snappy grapefruit finish. Light tart. A little bourbon. Pretty nice. Tap at Atlas.

Sampled at the brewery, pours a dark cherry amber with just some faint white head. Nose is interesting, lots of dried cherry, raisin, some cranberry, red grapes, some neutral oak. Flavor has dried cherry, raisin, some cranberry, cheap red wine, a little wood pulp, a bit earthy too. Finishes full bodied, lightly tannic but dry.

Tap. Pours hazy hazel, large beige head, great lacing. Aroma is woody, a bit acetic, cherries, Brett, oak tannins, caramel, vanilla. Flavor is all of the above, complex and nuanced, a bit vinous, red wine. Light sweet, nice Brett highlights, hints of tartness. Medium body, creamy. Really good beer. Winner.
