The beer refermented on the fruit for 5 months, before maturing in bottle for a further 6 months.
We used all the fruit from a single quince tree, located over the road from the brewery. The beer is intensely acidic, with a very heady aroma.

Bottle, shared round Dan and Megan’s gaff. Picked up via the online brewery shop. Vivid yellow gold. Fine haze. Sturdy ring of white froth. Nose has lime juice and peel. Ripe quince. Lots of flinty notes. Moderate bretty funk. Cut oak. Taste is sharp and tart. Moderate fruit sweetness. Hint of acidity. Clean and crisp on the palate. Brisk and foamy carbonation. Sharp fruit on the finish. Clean and elegant and nowhere near as acidic as I was expecting.

Bottle split at the Grand Reunion Tasting at MM, group purchase , 20/05/21. Lightly hazed golden blonde with a decent white cap that retains well. Nose is lemon rind, quince paste, funk, stoned fruits, dusty hay, barnyard esters, herb. Taste comprises Tangfastic chews, grape juice, wood must, funk, grains, herb, quince jelly, lemon wine gums. Medium bodied, fine carbonation, big acidic throat scrape with a drying close. Solid stuff ... not for the faint hearted ... if it's file under 'rated subjectively / not my kind bier' don't waste your time and effort on this one!

Bottle shared at Colin's place. Group purchase. A clear bright gold yellow coloured pour with a lasting white froth. Aroma is nice white peppercorn, fennel, spicy., mellow funk, little horse. Pineapple. Flavour is composed of super puckering sour, pineapple, lemon juice, white peppercorn, spicy, haribo, little fennel,. Paalte is refreshing, puckering sour, tangy, highish frothy carbonation.

Bottle shared in HW - cheers team. Pours clear gold, effervescent, with a tight, creamy white head. Lightly sweet, quite dry, some pale wood, lemony acidity, grass. Light bodied with active, massaging carbonation. Quenching finish, bone dry, sturdy acidity, more lemon, mild grass, pale wood, white pepper. Quite drinkable.

Bottle shared at Hazlemere hurricane tasting. Pours clear golden with a solid white cap. Aroma is barnyard funk, quince jelly, straw. Taste is really sharp quince, straw, barnyard. Sourness mellows but superb.
