This spontaneously fermented beer gains a unique profile thanks to its time in bourbon barrels. After allowing the wort to rest overnight in our coolship—a room-sized rectangular pan—we ferment and age it in bourbon barrels rather than the more traditional French oak wine barrels. Coolship Clermont features a bright copper hue and aroma of oak, malt, light funk, and citrus. Its mildly tart flavor profile contains notes as varied as tropical fruit, lemon, and bourbon. Though the barrels come from Clermont, Kentucky, the beer’s soul is pure Maine.

Bottle. Poured a clear yellow color with a small white head. Aroma was light white wine, very light bourbon. Light lemon, some grape. Kind of disappointing compared to so many Allagash offerings.

Kind of a different variant from their normal coolship lineup. Decent dose of whiskey, and then not a lot else. Kind of a thin aroma. Golden pour with decent head. Light tart finish. Bottle.

375ml bottle pours a clear gold with some white head. Nose is nice, lemon and raw cherry, some barrel, some champagne grapes. Flavor has some plastic and a little butter, raw stone fruit, medium acid. Not their best but still pretty.

Panda 🐼 at home Thanks to Colin. A hazy brushed gold coloured pur with a decent white cap. Aroma is semi sweet, vinous fruits, vanilla, leather, apricot, oak, sour funk. Flavour is composed of sour woody oak, white wine, raw oak tannin, sour grape, white raisin, horsey funk. Palate is raw oak tannin, pithy, moderate carbonation.

Bottle at home, from CW online, 13/06/21. Gusher alert .... not a Biggs but some liquid lost! Hazed orange with a good sized white head that stays for the show. Nose is dusty oak, funk, lemon tinged straw, mellow bourbon stokes, grains, hint of vanilla. Taste comprises barnyard esters, tarte fruit esters, apple skins, tannins, bourbon stained oak, funk, green berry must. Medium bodied, fine massaging carbonation, semi drying close with a balanced puckering kiss. Solid flavoursome stuff .... the bourbon is well pitched.

Bottle from HoTM. It pours hazy bright yellow with a thick, dense foamy white head. The aroma is fresh, funky and floral, daisies, honeysuckle, summer meadow, vanilla, bourbon soaked oak, hay, twist of citrus, lemon-lime and sherbet. The taste is crisp, firmly dry, minerality, zingy, lemony citrus, grapefruit, sherbet, dry oak, hay, musty, come chalkiness, deep funk and touch of spice with a drying, woody finish. Medium body and high, fluffy carbonation. Lovely aroma, but perhaps not as much depth as I was expecting. Nice anyhow.

Bottle. Beer Stop, Dronfield. 2 rates? Really? Wow. Opened with a huge pop. Thought it was going to gush, for a minute. Hazed, pale gold. Very lively in the glass, with a foamy white head. Nose has a little sick, but fortunately that gives way to some semi sweet oak. Some brandy notes. Some peachy notes. Taste has a light peach sweetness. Mostly though, it’s dry and lightly tart. Light to medium body. Ridiculous amount of foamy carbonation. Dry and light bitter finish. Ok at best.
