Mixed Culture Barrel-aged Quadrupel with Balaton Cherries

We took our extra-strong mixed-culture quadrupel that had been aged in oak barrels with a blend of saccharomyces, brettanomyces, and lactobacillus, and further aged it on balaton cherries.

375 ml bottle. Gusher on opening. Really… not expecting this to occur on a relatively new beer and a modern brewery with someone that knows what they are doing… Pours a hazy brown with little head even though the gusher. Aromas of malty balsamic vinegar. Flavors follow same with tart cherries and pits, plus some oak if I think about it. Otherwise use acidic. Very Dageraad.

Dullish amber, thin head. Aroma is a bit acetic, some darker malts, balanced cherry, light tartness.

Taster. Appearance: quite weird browny-purple-ish with a beige head, Aroma: Brett, oak, a lot of slightly sweet cherries. Taste: cherries, oak, and, unfortunately, a nail polisher. Overall: not impressive, a bit too much of the acidity, and the nail polisher doesn't improve the overall picture either, of course.

Poured from the tap. Clouded dull reddish orange with beige head. Fairly tart with a nice cherry underlay and gentle oak. Could see this aging nicely, but maybe a little early to drink as it stands now.

375mL bottle, pours a deep dark burgundy with a small beige head. Aroma is full of wild yeast upfront, followed by tart cherries, and some oak. Flavour is complex, with lots of deep pitted dark red cherries, moderate tartness, oak, and wild yeast. Lots of dark pitted cherries on the finish. Complex and well-integrated.
