Daniela and Antonio from Cantina Giardino sent us Greco grapes, a variety of white wine grapes.
These grapes underwent a 6 months pellicular maceration in an amphora.
The grapes were pressed and the marc was sent to the brewery and blended with a two year old Lambic.

Bottle at Cantillon. Pours a pale gold with small white head. The aroma is funk, oak, barnyard, grape must. Slick body, sweet grape, oak, funk, musty, light dry finish, very good.

Initial rating: 7-4-8-4-16. Re-rating, 2020 bottle as Sophia, had together with the wine. Loads of grape, some stonefruit, a bit of citrus. Some resemblance to the dry, tannic side of the wine. Complex yet very light and drinkable.

Bottle. Clear pale yellow color with white head. Aroma is white wine, green grapes, a touch yoghurt, some barn in the funk, also amphora weirdness. Taste is white wine, a touch buttery, mineraly, nice fruitiness and mellow, not too tart, again musty basement amphora. Oily mouthfeel with medium carbonation. Nice one, but I don't quite get it.

750 ml bottle at the brewery as Lambic Sophia. Light unclear pale yellow color with small off white head that quickly disappears. Malty and yeasty aroma, light funky, tart citrusy fruity and light vinous. Sweet and acidic taste. Almost medium oily body with soft carbonation.

Sampled at BXL 2018. Pours unclezr blonde. Pretty light colored. Small white head. Smell is funky. Dry. White grapes. Taste is sharp. Herbal and végétal. Intense white grapes. OK beer in general.

Draft @ BXL Beer Fest. Hazy yellow colour, white foam. Strange aroma of sweet grapes, vinous notes, plastic. Taste is tart with sweet hints. Strange beer.

Sample @ BXL BeerFest 2018, shared with Belgian RB crew, thanks. Dorée paille sur un léger trouble, col blanc léger. Arôme au bouquet funk, grains fermentés fruités sur le raisin mais avec un nez pas spécialement plaisant. Palais rend un funk classique de Cantillon avec une note rappelant un raisin vieux-pourri avec un accompagnement céréales sur une fin un peu minéral et de vieille cave. Le tout s'apparente presque plus à un cidre présentant des signes d'infections. Comme dit plus bas, si une autre brasserie aurait vendu cela les scores auraient été nettement plus sévères, mais ici, c'est Cantillon donc ... le score est déjà donné avant même de goûter. D'autant plus que j'ai eu de nombreux retours sur ce lambic qui étaient loin d'avoir reçu des ovations, donc les hauts scores ici me surprennent un peu.

Thanks to the RB crew for sharing! Sampled draft @ BXLBeerFest 2018! Milky citrus with no head. Vinegar, banana, plastic, spoiled skin,… Vinegar banana, honeydew plastic, vinegar, lemon vomit,…. Vinegar lemon, plastic, Why was this even released? If this was not Cantillon everyone would have hated it. I hear that this was good at first so it maybe went off? Still.
