Our take on Tepache is back! We refermented Lux with pineapples, their skins, and blended with our barrel aged Wild Ale named Leroy. Upon finishing, we bottle conditioned with a bit of salt, sage, cassia bark (cinnamon) and piloncillo.

Pale, no head. Doesn't really look great. Bretty nose with light pineapple. Tart, again a light pineapple character on the palate. This is nice.

Bottle pour at FHF 2024, pours a clear bright golden, no head. Aroma is full of bright pineapple, bone dry wild yeast, and some oak. Flavour is bone dry, with tons of dry pineapple, lots of funk, oakiness, and some bugs. Oaky, fermented out pineapple, and complex yeast on the finish. Excellent.

FHF 2024. Appearance: hazy golden with a white head. Aroma: rustic, a bit of oak, bugs. Taste: along the same lines, nice body. Overall: good one.
