Fermented in stainless steel with a favorite saison yeast, then transferred to oak barrels with brettanomyces for over a year for the funk demondemon. After blending the barrels it is aged on Whole Fruit Tayberries grown in the Puyallup Valley by Sterino Farms. Tayberries are a cross of Blackberry & Raspberry named after the River Tay in Scotland where they originated. The fruit do not pick easily and cannot be machine harvested. Expect similarities to its parents with a nice rosee delicate intricate sweetness reminiscent of a well made Carbonic Macerated Pinot Noir with fruity soft tannins with similar color & aromas.

Big, deep fruit aroma and flavour. Light tartness. Good complexity. Balanced and delicious.

On tap at Farmhouse Fest 2023, pours a hazy bright dark pinkish red with a medium pink head. Aroma brings out bright tayberry, jammy tartness, and bugginess. Flavour is bright and berry-dominated, with lots of jammy tayberry, bugs, and a touch of oak. Jammy and juicy, with lots of depth. Very good.

A taster shared with Josh, Matt, Phill, and Ryan during FHF with priceless Rachel's (yup, again!) help in organizing all the mess with glasses. Appearance: a bit hazy purple with a rose head. Aroma: fruity, bugs, some oak. Taste: same, a bit perfumy, but in a good way. Overall: good.

Draft 13 oz pour enjoyed at Hop and Hound. Dark black cherry red pout. Very little head. Tart forward flavor with some red raspberry, red wine notes, and a hint of candy watermelon. Sour fruit nose. Long lingering sour berry. Really fun sour overall. Not really sure why I went into a recent lull of E9 brews. Really fun and tasty sour here.

Dem tayberries are slammin. Kinda like a raspberry meets a blueberry? Or elderberry? Great unique (or at least rare) berry saison. Need more of these.
