A lot of hard work is going on behind the scenes as we expand our barrel programme and delve deeper into the world of wild and mixed fermentation beer.
This complex mixed culture sour has spent more than two years in a Burgundy barrel, and is unlike anything else we have released this year. Full-on funky flavours and acetic notes mix with layers of lemon, grape, hay and smooth oak.
Only five kegs of this beer exist.

Growler shared at Columbus tasting, 20/08/2018. Huge thanks to Wingman Dave for this one. A dull amber brown coloured pour with a lasting. halo of off white head. Aroma is paint, bretty lacto, sour, vinegar, white grape, musty, wood. Flavour is composed of sour, musty, white grape, oxidised, grape, wheat. Palate is tangy, sour white grape, musty funk, light vinegar, little burny.

Growler split at L6, big thanks to the Wingman, 20/08/18. Hazed golden amber with a well presented off white cap. Nose is pissy fruit rinds, ladies knickers (moderately hot day), straw, damp wood, funk. Taste comprises lemon rind, damp wood, funk, barnyard, brett, dusty fruits, light pissoi, green apple, stoned fruits on the wain, light buttery tones. Medium bodied, fine carbonation, semi dryig close with a balanced puckering climax. Decent enough sour.

Level 6 Bottleshare. Thanks to Wingman for the hand bottle. Hazy and slightly dirty gold beer, small pale cream colour head. Palate is light and finely crisp. Minerally crisp. Great condition. Woody sourness. Sharp ripe lemon and orange. Little guezey sourness. Light finish. Nice, if a little tart.

Growler shared in London - cheers to Dave! Pours cloudy dull gold with a foamy, white head. Well funky aroma, lots of acetic acid. Strongly acetic, some butter, grains, lemon, hay, vinegar. Meidum bodied with spritzy carbonation. Sharp finish, more pale grains, popcorn, vinegar. Pretty so so.

Tap at Cloudwater. Pours hazy orange gold with a thin laced white head. Aroma is bread, a lot of funk, a little orange. Taste is a big funky hit, breast malts being it back but still has quite a sourness but not too acidic. The barrel ageing is definitely there mellowing the sour. Nice

Tap at Cloudwater. Slightly murky looking, gingery gold. No head to speak of. Nose has sweet granary bread. Sweet cider. Straw. Apple cider vinegar. Hint of leathery funk. Hint of lemon rind. Taste is sharp, acetic, and pretty drying. Thereโs some bready, grainy sweetness. Medium body. Low carbonation. A little burn from the acidity. Sweetness comes through on the finish, with more of the acidity.
