Missouri Saison Blended with Belgian Lambic - a collaboration with our friends at Mikkeller!

Today we release to you one of the more gracefully aging beers we have ever produced - SpontanFermier Blend #2. Obviously, when you use true Belgian Lambic in a blend, it allows this beer to not only taste amazing today, but for it to also gracefully age and excitedly develop into something more.

We once again collaborated with Mikkel of Mikkeller to allow us access to his Belgian Lambic sources. We are not allowed to directly say where this Lambic came from, but I promise you that most everyone reading this knows this producer and has seen the marriage of their work or even their label which is black on the shelves from time to time.

SpontanFermier was a 50% Belgian Lambic and 50% Saison du Fermier blend which was bottled in January and allowed to rest until we decided it was ready to share with you. The rustic characteristics of the Belgian Lambic marry perfectly with our bright, youthful Side Project qualities once again. Flavors we cannot create without our process of blending!

375mL bottle drunk 8/4/25.
Clear, rosey-brass-golden with a small, off-white head.
Tart and fruity with good lambic and saison character alongside moderate oak. Light white wine and butter with good acidity, quite healthy per SP, but maybe not so much as usual for a lot of their sour stuff. Certainly aromatic, bright and focused.
Bright and wine-forward barrel with excellent saison character alongside a fruity, earthy, lightly oaky lambic. Good malt/wheat depth/texture and not too sour! It's so nice when there's no acetic, so you can really enjoy the oak/wine/butter/tannin without the acidity building up too much. Here's to more to come like this from SP!

Bottle. Color: Slightly hazy golden, frothy white head. Aroma: Tart, spicy Saison yeast. Taste: Over moderate to medium tartness, tart green apple and lime notes, combined with spicy Saison yeast and light hopbitterness in the background. Medium body, just below average carbonation. Nice complexity and well balanced.

Bottle. Pours golden with medium white that lasts. The aroma is funk, barnyard, wood, straw. Slick body, apple, funk, nice tartness, enjoyed this.
