Bière de Cabaret is influenced by the pale beers made for drinking in public houses, or cabarets, of the Nord and Pas de Calais departments of Northern France. A simple low alcohol grist bill was enhanced with Danish raw buckwheat and emmer, fermented with our unique house yeast and aged in a red wine foeder for 8 months.⁠⠀

Blend 2 sees a few minor changes from blend 1 to enhance its drinkability. These changes include increasing the bittering and whirlpool hop additions to bring more floral, grassy, and mild citrus notes, and the introduction of a small portion of unmalted emmer to help increase the body in this low ABV beer.⁠

Pours hazy pale yellow with a white head. Aroma has notes of malt, funk, white grapes, tartness. Taste is light sweet and light to medium bitter with a long dry, funky, tart, grapes finish. Body is light, texture is thin, carbonation is soft

Cloudy yellow gold with a decent white head. Light funky lemon. Light soured lemon with a bit of barrel funk and a clean finish.

9-4-8-4-16 Bottle, blend 2, three years before bbd. Pours clear yellow, with a creamy head. Aroma is nice farmhouse notes of hay, lemon and bretty notes of berries, as well as light wooden notes. Medium body, with average carbonation. Flavour is tart wheaty notes with hay and farmhouse notes, as well as floral brett and wooden notes. Highly quaffable, refreshing and moreish.
