Made using the full traditional Champagne method using a blend of our bittersweet cider apples. Sumptuous palate of spiced apple, with a hint of toffee.
Mouth filling fizz, yet balanced and clean to the finish.

75cl bottle (2011 bottling), via Scrattings web portal. Drunk listening to Faith by The Cure. Pours a generally clear golden amber with consistent effervescent bubbles rising through. Aroma is wild, woody. Taste presents a bright bristling spritzy fine carbonation, woody bark, barnyard sour, leafy orchard fruitiness, apple core. Interesting. My palate has definitely grown to appreciate these ciders more. 75cl bottle from Three Counties Cider Shop, Ledbury. Expected a lot more from this given the price, and the awards it’s won. It’s certainly bubbly, and nice enough if a little dry, but just lacks a sweet fruitiness and real character. Given the stellar quality of other Once Upon A Tree ciders this is a little disappointing.

Picked this up from Tanners Wine Merchants, Hereford July 8th 2012. Consumed at Jan & Charlotte’s, Ulfborg, Denmark in company of Jan, Charlotte, Craig, Stella, Morten & Loz 18.05.13 Very champagne like, dry, fruity and quite explosive out of the bottle, as Jan found out :-) chuckle.. The dryness is apparent from the off. I think that this is aimed at the champagne market, and whilst not totally my thing and what I am generally looking for from a cider, I have to say for what it is, it is very good!
