Bottle: Unfiltered In 1952, in order to place the modernisation of the brewery on the right commercial footing, much care was taken with the launch of Rochefort's two new beers. The refectory beer had been the basis for the development of the ‘Middel’ (also known as ‘Merveille’) which became the Rochefort 6. The 10, however, needed something else to elevate it: candy sugar, steeped in the wort in metal baskets, quite an innovation in those days. Furthermore, two malts were used in the brewing process: pils and caramel malt, as well as wheat starch, two varieties of hops and Rochefort’s own yeast. The result was the powerful Rochefort 10, a beer sure to warm your heart with its robust dose of alcohol.

11.2 oz. bottle into Trappistes Rochefort glass. Pour is dark brown with a creamy beige head. Aroma is cherry, dark fruits, caramel, and has some vinous qualities. Taste is dark fruits, plum, Belgian yeast, spice, malt, caramel, vinous, and nutty. Has a creamy, velvety texture. Warming finish, but not overly so. Very complex, but I’d like to think the recipe is a simple one that has been perfected over many years. One of the best.

Pours very dark brown color with small, short lasting off-white head. Hazy appearance. Lovely smell, sweet and floral. Full body with average carbonation. Creamy, thick texture. Very smooth on the tongue despite the alcohol burn. Taste is mostly sweet. Rich aroma. Herbal, floral, toffee, spices, nuts... Lovely. Dry finish with subtly noticeable alcohol presence. Overall, excellent.

Bottle. Pours dark chestnut brown with huge white head. Aroma is malt, yeast, caramel, cinnamon, nutmeg, prunes, black currant jam, port wine and hints of hay. Taste is medium acidic, light salty, light bitter and medium to very sweet. Body is creamy with soft carbonation. Finish is long and mostly sweet and somewhat bitter with notes of sugar, malt syrup, honey, toffee, bitter grapefruit, pomegranate, port wine, sweet licorice and raw salty licorice. Very rich and complex

330ml bottle. Pours deep brown with a medium and persistent off-white/beige head. Aroma is malty, caramel, toffee, dried fruits, cherry, brown sugar, yeasts, fruits. Flavour is sweet and malty with a vinous touch and a bittersweet end. Full body, medium carbonation. A great beer!

Pours very dark brown from the bottle. The creamy tan crown remains rather small but lingers for the duration. Quite striking is the aroma, which is inviting as well as complex; the usual roasted malt and caramel is present but portwine and cherry play strong accompanying roles. The first sip is smooth and very warming. The overall impression the beer makes is rather like a rich and sweetish tasting stout mixed with a good cognac or portwine. The tastes are really pretty amazing, and each sip is a little different, and draws you in, leaving you wanting more. Hints of caramel, plum and bubble gum are all present, and the beer finishes with a soft cherry note. The beer came to me highly recommended and has not disappointed. At 11.3 ABV and being heavy bodied and rich it is not something I could see drinking on a regular basis, but it makes an excellent digestif and would certainly be a good winter beer. The next bottle I plan to age and see how it tastes in two year’s time. Excellent. 09/2019: bottle probably two years old. Foamy head that fails to last. Big sweet aroma full of toffee. Much the same as above although minus the vinous portwine notes. Still a classic.

Pours a dark brown. Raisin and dark fruits with yeast notes in the very complex aroma and taste. Excellent, the best Quadrupel I’ve ever tried and, therefore, my favorite one.
