A few times a year, we will cut Dan loose to brew whatever he chooses, uncensored, uncut, unplugged. Always handcrafted, this beer is brewed for the adventurous soul. This is a very limited edition and we make no promises to ever brew this style again.
Our Imperial Saison captured a bold celebratory shout of apricot and peach in a bottle. Both bright and bold this is a lively truly living beer. Bottle conditioned with rare Belgian yeast and soured to illuminate its copper hued body. Ginger and Grains of Paradise promiscuously dance with Styrian Golding hops. Wipe winter from your brow and enjoy now or attempt to resist its siren song and lay down in your cellar.

Pour is a hazy redish with a huge white head. Aroma is wonderful. Some ginger, cinnamon, mango and nutmeg. Flavor is not as intense as the aroma but there are lots of lots of tart citrus fruits with a nice spice to go along with the fruitness. Finish is sour and a bit tart. Probably the most fruity saison’s i have ever had but it works.

Bottle. Poured an orangish gold with a lasting white head that laces well. Aroma consisted of peach, cherry and apricots. Flavor is sweet with a slight tartness. Notes of of cherry and peach. Quite enjoyable.

Pours a nice golden-orange-yellow with nice thick head, that dissipates rather quickly. This has a very complex, sour taste, with some fruit, some sweetness, and some bitter notes. It’s almost a bit too sour to really let all the other flavors blossom to their full extent, though certainly enjoyable nonetheless. I’d say this is one of Dan’s better experiments.

Courtesy of markwise. It pours gold with tiny with head. The aroma is sweet slick sugar with apples, cotton candy and a bit of spice. The taste begins with sugary green apples moving into ripe red apples then a mild dash of green apples sourness briefly intervenes. It dries out into the finish somewhat.

Some yeast. Cloudy yellow with a tall, thin head. Aroma has yeast and citrus. More citrus in the aroma with Belgian yeast. A little harsh on the palate, from the alcohol I am sure. There is lots of malt, but this is also a sour beer. Not as sour as a lambic, but more of a sour grain, citrus sourness. It would be better if the alcohol was at an appropriate level.
