We matured our Burton IPA with a mixed culture of wild yeast in oak casks outside the brewery, exposing the wood to the elements for over a year in an attempt to simulate the sort of conditions that gave rise to the strong, vinous stock ales produced in a similar way two or three hundred years ago.

The maturation has transformed the beer, rounding off the bitterness and producing a much drier finish, albeit with an appreciable amount of residual sweetness. The characteristic honey and apple notes are still prominent but are now part of a more complex picture that includes wine-like acidity, sour cherry, dried fruit, toffee, soft vanilla and of course the characteristic Brettanomyces funk.

330ml bottle from Appelation Wines some 2 years ago. Pours a cloudy red/brown with a small white head. Aromas & tastes of cooked apples, grapefruit, caramel, wood & earth making for a real funky ale. Medium body. Tart finish.

Bottle from Luvians St Andrews. It pours hazy deep red - brown with what starts as no head at all then builds into a sturdy yellowy -; khaki head. The aroma is earthy, musty, damp wood, some funk, dried fruits/berries, tang, nuttiness and spice. The taste is drying, bitter, toothy, chewy, resinous, damp oak, leafy, sone tartness, dried fruits and berries, gooseberry, white grape, deep funk, brett, tannin and a splash of diet Irn Bru. Finish is dry oak and tannin. Medium body and moderate+ lively carbonation. Great depth. Interesting and quaffable. Love it.

Bottle at home... Dark amber.. Thin white lacing.. Soft sharp funk nose.. Soft toffee malts.. Acetic woody edge.. Sharp tart acetic woody malts

Bottle from Appellation Wines. Appearance - light brown and opaque. Creamy white head. Nose - honey, wood, sweet spice, candied orange and toffee. Taste - booze, wood, light Sherry oxidation and dried orange. Palate - medium bodied, oxidised and tangy in the middle. Dry, woody and oxidised finish. Overall - I think this is authentic to the history. I'm just not sure it's my thing today.
