Red Dabinett was made by co-fermenting a strong red IPA-style wort with juice made from the traditional bittersweet cider apple Dabinett. Dabinett produces a strong, juicy cider with mighty tannins that border on bitter, so we thought it would be a great pairing for a strong, juicy, bitter wort made with munich malts and resinous New World hops. The resulting blend is powerful, rich and heady, but cut with a decisive bitter finish of apple tannin, hop resin and oak

Novel stuff, dry peel, mellow tang, a little smoke. Some ripening apples, too. Dry finish, musty but clean.

Bottle via the online shop. Misted gingery copper. Thick loose lasting just off white foam. Nose has smelly Dabinett, although it’s a restrained smelliness. Pine cone and resin. Sweaty brett. Sawn oak. I mean if you saw oak, that’s this. Taste is pretty dry with a slick chewy bitterness. Loads of body with that easy drinking Mills complexity they wring out. Awesome gear. Obviously.
