A big, smooth, balanced stout brewed with sea salt, chillies and cacao nibs. Full bodied with a touch of salt. Scotch Bonnet chillies give at first a fresh fruitiness and then lead to a gentle warming. The whole beer is balanced by a small addition of cacao nibs, used to add a smoothness to the body, rather than to impart a chocolate character. A perfect match for oysters, but equally as delicious on its own. Brewed with Bramling Cross and Summit.

Draft at the brewery taproom. Pours black-brown with a creamy, tan head. Nice roasted malts in the nose, some dry cocoa, hints of toasted chilli peppers. Medium sweet flavor with a nice bittersweet cocoa base, accented with modest peppery heat and scorched earth. Medium bodied, lightly heat, with fine carbonation. Lightly warming on the finish, with a bit of gooey chocolate, some bitter baking cocoa, lingering chilli pepper heat. Just what you would want of a chilli stout - a nice accent of heat, rather than dominance. Good stuff.
