Bottle at Deep Ellum back in 2011.
Clear, dark mahogany with burnt umber highlights and a small, tan head showing moderate retention.
Big and rich with oily roast, dark fruits and light vanilla. Good attenuation, highly fruity and if I recall correctly, this had at least been aged on oak chips, if not full barrel, coming out quite mild on the wood, with just light toast and mild, warming alcohol on the end.
In the mouth it's soft, rich and tightly carbonated with good attenuation, lightly spicy bourbon character, dark roast, dark fruits, vanilla and good wood tannin. Chocolate and caramel on the finish with light warmth but no aggressive alcohol nor oak/bourbon. Quite nice and great attenuation and texture.

Backlog entry 22-ounce bottle thanks to Toby. Pours out black top with a small tan head. nose is nice Chocolat bourbon Oak black licorice. Taste is more of the nice chocolate coffee smoke bourbon notes and a nice Oak.

Bottle dated Jan 2011 cellared until new years eve. Black oily pour with very little head. Caramel and roasted malt aroma, very little hop presence. A little light shows through, but nice much. Taste is very smooth roasted malts with a light sweet caramel flavor. A nice "mild" imperial stout in the vein of Sam Smith’s.

Bottle 22fl.oz. @ [ Tasting by Fin & Loz ].Clear dark dark black brown colour with a small to average, frothy - fizzy, good lacing, mostly diminishing, light brown head. Aroma is moderate to heavy malty, roasted, caramel, chocolate, licorice, alcohol. Flavour is moderate to heavy sweet and light heavy bitter with a long duration, dark chocolate. Body is medium, texture is oily, carbonation is soft to flat, finish feel is light alcoholic. [20111021]

Bottle at Fin & Loz’s tasting with Jan, Charlotte, Craig, Stella & kids consumed 21.10.11 Pours pitch black with no head. This has been the smoothest of the three Impy stouts that we have tasted. Bitter and roasty at the back of the mouth, really quite fruity with plenty of warmth from the alcohol, a very light dab of soy sauce and there is some vanilla also. Interesting. bottle at home ... deep black ... soft roast ... big malts nose... licorice ... huge saltyness up front ... bitter almost charcoal front ... woody bitterness ... soft chocolate ... nice but quite big and heavy...

Pours deep brown into a snifter. Mocha head with medium retention recedes to film surface and hug rim. Soy and espresso aromas. Thin with sweet licorice and soy upfront turning to mild chocolate in the lasting hot finish.

22 fl oz bottle. Pours pitch black, dense and with a tan and creamy head. Aroma is dark roasted malty, light chocolate and liqourice. Thick liqourice malty, solid bitterness coming through. Smooth and dark to hard roasted malty. Bitter and liqourice finish.

Pours a solid black with a respectable tan head that slowly dissipates to a cap on top. Smells of whiskey and wood, chocolate and coffee heavy on the booze and wood. Taste is a bit hot with alcohol up front. Lots of creamy chocolate and roasted malts mid way through. Kind of a dry finish with a vodka/rubbing alcohol taste lingering long after each sip. Syrupy mouthfeel, medium body, light level of carbonation. Young hot and unbalanced, the flavors need time to meld and soften. Some time might fix this one, but as is this one is only ok.
