Spontaneous Mixed Fermentation Loquat & Peach Farmhouse Ale

These brews start their life in a DIY coolship, then fermented for at least 1 year and then seasonal fruit, usually handharvested by us, are macerated for about half to a full year! We approach these brews with humility, minimum intervention and respecting nature's decisions along the way! In the end, we are part of this, so who are we to decide what's best?

Specifically this is a spontaneously fermented brew, full of random native brettanomyces strains that give that heartwarming horse blanket and wet dog aroma that we always love so much!? Local handharvested loquat and peach is added providing tannins and umeboshi notes. With a huge amount of lacto cells, alive and viable that provide the soft tartness throughout the pallet, it's almost at a probiotic lvl!

Can courtesy of Kostas, Kykao brewery, cheers Kostas. Had this Saturday 14th February 2026 at the Manglham 2nd Winter Tasting. This is a hazy, light lemony, slim white head, fruity with a tang, not sure about this, it's not doing anything much for me. Tart, zappy and tangy, sour, but disappointed. Score 6.8

Fancy waxed bottle, huge thanks Fin&Loz&Kostas! Mangled Ham 2026. Yellow body, misty, fleeting head. Citric, bit yeasty aroma, herbal, bretty, hmm... light autolysis? Otherwise fine. Sourish, bit yeasty-sulfury taste, brett maybe, but not in the best of shapes, berry-citrus fresh notes here and there, bit herbal but just... not appealing as a whole... low fruity sourness. Fun experiment, love loquat's in a beer, nešpula! But... as a beer... okay.

Bottle. Pale milky yellow, quick head. Cactus, acid, herb, mealy on the palate, bland grain mixed with tart, acid backend. A bit weird. Not my thing.

Bottle at Tales of Ales in Athens. Slightly hazy yellow, white head. Loqyat, peach, apricot, juicy, funk, sourish and bitterish, oak, slightly astringent. Good.
