Bottle courtesy of my Norwegian friend. Clear golden yellow pour with a big white head. Sour apricot, light funk, and oak aromas. The is very tasty and uber smooth with tart citrus, lemon, mild funk, and oaky notes. The bourbon is totally hidden in this delicious lambic. I was really looking forward to trying this Cantillon gem and it did not disappoint....

Bottle, dry-hopped variant bottled by Uli, drunk 10/8/16.
Fantastic appearance with a very large, white head showing good retention. Good clarity throughout the flaxen-golden, copper-tinged liquid.
The nose is immediately plagued with green pepper and it just would not let up. I let my glass sit well over an hour and kept coming back to it, but nothing. I can only guess the dry-hopping has gone awry here, which is a dirty shame, as the beer itself is absolutely fantastic and in wonderful condition. Moderate sourness, very low on acetic character and lending lots of brett and playful fruitiness. The bourbon is not actually noted, nor is the beer overly tannic. No alcohol or flaw (other than the green pepper).
In the mouth, unfortunately, the green pepper remains and though it’s not like the green pepper you get from coffee beer infections, it still is very dominant for such a delicate beer. Oranges, nectarines, playful brett notes and light lactic acid all play about the wonderfully light, yet tightly carbonated palate. Lingering moderate acidity, with tons of orange rind, and light yogurt. A great dryness and yet still supple with perhaps some help from the barrel tannin. Yet no bourbon here to speak of, thankfully. Only moderate on the funk scale, yet still in wonderful shape and very delicious. Stupid dry hops....Still, I don’t see much reason in lowering the score due to some dry hops that went bad.

Tap at Pikkulintu, Helsinki. Colour is slightly cloudy orange with small white head. Aromas and flavors: Fruits, citrus, oak, hints of bourbon and nice soft sourness.

37,5 cl bottle @ Olutravintola Pikkulintu. Rated on 19.02.2010 Aroma has whiskey notes, some vanilla, grapefruit and earthy notes. Flavour is sour and somewhat tart with grapefruit, earthy notes and some citron. Finishes with whisky, woody notes and some vanilla. Unique and good, quite a surprise that whiskey and lambic mix so well.

Draught @ Pikkulintu
Aroma has cantillon-grapefruit and some milky tones. Also rhubarb. Flavour has aggressive tartness, some milky tones, grapefruit, rhubarb and distant woody tones. No signs of whisky - or perhaps it is the slight cognag-like sweetness in the aftertaste. Excellent stuff and does not feel old at all. Not that older lambics usually would.

Bottle at Pikkulintu. Cloudy golden color, medium white head. Aroma of dusty grapefruit. Taste has moderate funk, some caramel and lemons.

Entered to Celebrate My Rating # 5600. Bottle @ Papsø-Grand-Tasting, September 2010. Pours unclear golden with a creamy white head and lacings. Oak, barnyard and brett. Sour flavor with a hint of berries and wood. Super dry end. Niceness!

Bottle 375ml.Clear medium orange color with a large, frothy, excellent lacing, fully lasting, white to off-white head. Aroma is moderate to light heavy barnyard - leather, tart - sour, oak - wood, smoke - rubber notes, vanilla notes. Flavor is moderate to heavy sweet and moderate acidic with a long duration, dry, light smoked whisky - bourbon, vanilla notes. Body is medium, texture is oily, carbonation is soft. [20100630]

Cloudy golden with a huge off white head. Sour nose with barnyard, leather and sour apples. Flavor was dry and sour with notes of leather, hay, wood, bourbon and grapefruits. Finished dry and sour. Rounded and balanced. Lovely.
