Hazy blond color. The aroma is pungent, earthy, with manure, and passion fruit; very strong. Moderate sourness, vinous, soft, dynamic, with a lot of grapefruit. Excellent.

Cooperation between Girardin and Revelation Cat, in a series of young lambics tapped over green hop at beer festivals, in this case Nelson Sauvin. Unblended lambic so no head, lightly hazy orange blonde colour. The aroma shows, as expected, all the complexely refined lambic attributes of lemon pee, hay, dry sherry, straw, green apple, horseblanket and so forth, but is in this case a bit overshadowed by the green, fresh hoppiness from the Nelson Sauvin. Taste refined, ’malse’ lambic, very very fruity, sherry, hay, sour but in a gentle, more lactic than citric way, drenched in a green, crisp, bitter hoppiness that carries long into the finish; interesting to link lambic sourness to hop bitterness, but to my taste the latter was a bit too dominant.

Sampled @ Copenhagen Beer Festival 2010. Hazy orange body with an off-white head. Aroma is citric fruity with rubber and some barnyard. Flavor is light malty and quite acidic. Sweet, bitter, fruity and acidic. A nice combo, but I prefer the Simcoe.

On tap at KØ-10. A hazy, golden beer topped by a small, dense, off-white head. Tropical fruits and some rubber in the aroma, lemon peel too. Lemon, barnyard and tropical fruits in the mouth, dry, full-bodied and puckering. Really lovely flavor in this one, but I’m still doubtful whether the dry-hopping is a good idea or not. At least it’s not a good idea to discard the non-dry-hopped lambics. 100506

On tap. Cloudy and opaque orangey golden with a small, rough off-white head. Dry Lambic notes in the aroma but also distinct Nelson Sauvin. Medium body, flat, dry, smooth again with evident Nelson Sauvin. Dry and tart finish. I think the hops are coming through the most in this version. 080510

(Draught at Mikkeller Bar - quite probably this one and not the 3 Fonteinen one) Poured amber and cloudy. Head was quite large and white. Aroma contained sourness, fruitiness, black currant leaves and malts. Palate was medium bodied with medium carbonation. Flavours were fruitiness, sourness, black currant leaves, sweetness and bitterness. Aftertaste was sour and bitter. Nice experiment.

6th May 2010. Copenhagen Beer Festival. Cloudy gold beer, light suddy head. Crispish dry palate. This one stood out from the rest of this series. The Nelson hops are big enough and bad enough to look after themselves and balance the lemony sourness. The passion fruit and blackcurrant coming through clearly. Nice.
