We brewed this ale only with the famous sake yeast No. 7 from Masumi Sake in Nagano, Japan. On advice from Masumi’s master brewers we fermented this ale very slowly at low temperatures to bring out No. 7’s fabulously fruity character. This is a beer, but has some flavors found in a sake. A great combination!

Draught @ Mikkeller Bar, Viktoriagade 8BC, kld., DK-1655 Copenhagen, Denmark.Unclear medium red orange color with virtually none head. Aroma is moderate to light heavy malty, caramel, sweet, candy, berries, alcohol. Flavor is moderate to heavy sweet and bitter with a long duration. Body is medium, texture is oily, carbonation is soft, finish feel is light to moderate alcoholic. [20100506]

Draught@Mikkeller Bar. Amber colour, small head. Aroma is mild roasted notes, caramel, fruits as well as quite much alcohol and also mild herbal notes. Flavour is fruits, alcohol, some caramel and some mild herbal notes.

Draught at Mikkeller Bar, Copenhagen. Hazy copper colour, no head. Sugary nose. Super sweet with sugar and artificial sweetener as main flavour components. resiny and inky. A perfect mess, unthinkably sweet, thick syrupy and cloying. Rivals Kefir Milk Beer to be the most revolting things I’ve ever attempted to putin my mouth. My god - this is unbearable, please Nøgne Ø - save your effort to brew real beer instead. (1/1/1/1/1 =0.5) Re-rate, bottled at Stockholm Beer Festival. Where did all the sweetness go? I mean, this is still sweet, but now there is a very interesting grainy biscuity malt tone underneath. The finish is still unpleasantly inky, but it’s nowhere near as bad as I prevoíously thought. Clear amber, no head.

250 ml bottles, courtesy of the brewery, and Cardinal Pub & Bar, Stavanger. Brewed with sake yeast, Nasumi No. 7. Reddish orange colour, low head. Very nice vinous aroma, notes of sherry and oak. Sweet flavour, notes of sherry and oak again. Warming mouthfeel.

From tap at Mikkeller baren. Pours hazy orange with a fully gone head. Aroma is roasted malty, caramelish and light fruity. Roasted caramelish and fruity flavoured. Sticky sweet and caramelish. Mild burn note. Sweet malty finish with a distinct bitterness burning through. Strange on the yeasty notes.

Draught. Frothy white fair fully deminishing head. Orange colour. Moderate malty and light hoppy aroma with rice notes. Moderate bitter flavor. Exstremely powerfull and vinius. Long fantastic finish. Creamy palate. Really nice experiment.
