As with the 02.02.02 and 03.03.03, we are again making a detailed homebrewing recipe available on our blog. This time around we used some unmalted wheat, just the right touch of kaffir lime leaf and a really cool Belgian yeast. The result is a bit like a strong Bière de Garde/Saison-esque influenced beer coupled with some aromatic Bavarian Hefeweizen-style phenolic banana esters, and a backnote hint of lime from the lime leaf. Perfect for a match-up with some Thai in SoCal (or wherever in the world you might be), as kaffir lime is often combined with garlic, galanga, ginger, fingerroot and chiles (in the Tom Yum that is, not in this beer). Or, most certainly, you may choose to enjoy alone in a glass along side its Epic brothers.

Cloudy gold - amber beer. Small off white head. Light semi soft palate. Sweet tripel like malts with herbs and spice. Seamless blend of ginger, lemon, floral things and a little sherbet. Finishes semi soft and semi dry. A few oxidisation notes at the start but they burned off quickly. If you have one of these - I would drink now!

Blind tasting at Yespr, 6 years old
Golden color; creamy head. Caramel aroma with light phenol and honey. Caramel flavor, ordinary body strength; a bit oxidised. Strong bitterness, but also warming alcohol. The final gets drier and a bit astringent. There are some hop qualities, but also some strange phenol. Nothing impressive.

22oz Bottle at our 10-10-10 tasting. With a huge thanks to ditmier for sharing this. Pours out a copper/golden topped with a small head. Aroma was of spice, rich malts, light hops, and sweetness. Taste was more of the aroma with the spice and Belgian yeast driving the bus.

Enjoyed at Smallbar in Chicago, IL one day after finishing the Chicago Marathon. I feel like I stumbled upon One-Eyed Willie’s treasure chest from the Goonies, its like drinking in a time machine. Aroma like candy, possibly Belgian candi in there mixed with a stong barley wine odor. Appearance like gold with a thin head. Taste of caramel, slightly sweet, very smooth, tastes like it was aged in oak barrels. Great malt flavor, a hint of fruit in the back as well. Freaking incredible.

Cloudy amber with a tiny white head. Hoppy aroma with floral and malty hints. Sweet flavour with lavendar, hops and fruity notes. Finished dry and bitter.

Sweet malty toffee aroma. Cloudy amber, thin head, slightly viscous, no head. Low carbonation mouthfeel, smooth. Overripe cantaloupe flavor, mild cashew finish. Alcohol present but nicely concealed. Lacking in complexity, but unique. After 6 years of cellaring, I don’t sense a lot of hefeweizen or saison attributes. More similar to a tripel with this much age.

Bottle. Faint spicy aroma, not the pungent type, but very subtle, hint of fruit. Hazy golden colour. Very small bubbly white head. The flavour has some caramelly hop and malt notes. Hint of sweet, spicy fruit. Quite sweet, but attempted balanced by the faint fruit note. Seems a little alcoholic, but is not as flavourful as it could have been. 737317

Bottled@Blindtasting at yespr. Golden colour, small off-white head. Aroma is honey, quite big on the hops, wood, some mild alcohol as well as grass. Flavour is grass, fruits, floral notes as well as some mild alcoholic and glueish notes. Has aged rather well.

[ Blindtasting Bottle #8. ]Light unclear medium orange color with a small average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, caramel, moderate to heavy hoppy, flowers, fruity, perfume notes, acidic orange notes. 22 fl oz bottle. Pours hazy orange with a small off-white head. Aroma is oxidised and yeasty. Fruity, roasted malt and light breadish flavoured. Bitter and dry into a roasted and mild metallic finish. Ends dry and roasted.
