Voici Opale, un assemblage de Barleywine affiné pour une moyenne de 24 mois en barrique de bourbon Knob Creek. Il s'agit d'une assemblage de Barleywine affiné 28 et 20 mois en fût de bourbon. Vous y trouverez des notes intenses de bourbon, de fruits confits avec des notes riches de toffee, de caramel. La texture est riche avec une pointe très légèrement tannique. Les saveurs sont dominées par des notes intense de bourbon et de fruits confits.

A deep dark brown barley wine with a thin mocha head. In aroma, sweet fruity caramel malt with vinous notes, dark fruits, licorice, alcohol warmth, very nice and rich. In mouth, a nice sweet fruity caramel malt with dark fruits, licorice, alcohol warmth, woody notes, very nice and smooth. Bottle at Festival de la Bière de Laval 2025.

Aroma: nice dark fruits, caramel, moderately sweet, American oak.
Taste: along the same lines, with some hoppy bitterness in the finish.
Overall: quite good, but still nothing mind blowing.

Bottle: Poured a pitch-black color barleywine with a dark brown foamy head with some retention and some lacing notes. Aroma of deep caramelized notes with some strong woody bourbon notes and vanilla. Taste is also a mix of deeply caramelized malt notes with some vanilla notes with some strong bourbon and a sweet finale. Body is pretty full with an oily texture and good carbonation with some discernible alcohol notes. Nice woody bourbon barleywine with with semi-sweet finish.
