This traditional saison is brewed using North Carolina grown barley, wheat and rye from Riverbend Malthouse and is open fermented. The beer is then finished with Brettanomyces and bottled. Drink it fresh, or let it age and bring out the funk.

Vintage 2017. Golden colour, small white head. White grapes, a bit cellary nose. Light-bodied. Grapes, hay, a bit of honey and cellar. Shows a bit of its age. PBF XV.

Bottled at PBF. Clear golden, small head. Mushroomy nose with some apricot. Mid sweet with medium body and rounded mouthfeel. Slight mouldy funk, honeyed grains, mirabelles and hay. Low bitterness.

PBF XV. Golden colour, small white head. Aroma is tart wooden tones with some mild funk tones with a bit fruity and citrusy tones. Flavour is funk, some dry wooden tones with mild citrus and some mild toffee tones.

8-3-7-4-14 Bottle, vintage 2015. Shared with Inbreak and friends. Gusher. Pours hazy pale yellow, with an enormous creamy head. Aroma is tart lactic notes of hay, grapes and floral bretty notes, funk and wooden notes. Creamy body, with fizzy carbonation. Flavour is lactic notes of hay, grassy notes and grapes, as well as bretty floral notes, funky farmyard and wooden notes.

Frothy white good mostly lasting head. Yellow colour. Moderate malty and hoppy and yeasty aroma. Moderate bitter very bretty flavor. Average moderate bitter finish. Fizzy oily palate.

500 ml bottle. Bottled on 5/11/17. Honey gold pour. Frothy white head and clinging lace. Subtle funky citrus aroma. First sip brings lively carbonation and crisp, dry lemony notes. As it warms, the the Brett character emerges and grows. Earthy malt flavor hints at rye and wheat. Strong citrus overtones in middle. Lemon and lime along with kiwi fruit notes. Crisp and dry finish has champagne-like tendencies. Peppery bitter hops as well.
