In January of 2014, supplied with many ICUs of fresh juice and zest, we sought out the comfort and open air of our natural surroundings. A simple wort of pilsner malt, wheat, oats and spelt was allowed to cool in the quiet winter evening, open to stars and all the best that our lands offer. After nearly three years resting in oak barrels and extended bottle conditioning, we present to you a complex, bright, citrusy reflection of our ever-growing vision for what beer can be.

Bottle shared on MV. Picked up via trade. Cheers! Pours clear orange-gold with a small creamy white head. Light sweet flavour with a soft savoury and citrus note, low acidity, soft funk, melon, peach, mild salinity. Light bodied with fine, massaging carbonation. Super clean finish, faintly herbal, more citric tartness. Quenching. Delicious.

750ml bottle at the brewery, 5/17/23. Clear, deep maize-honey-gilden. Frothy, white head to ring/cover quickly. Funky and elegant. If this was ever aggressive, it certainly is not now. Huge mineral, chalk, plaster, earth, fruit skin and light barnyard. All Brett and lacto and pedio. Not acetic at all. Rustic grains add depth, complexity and soften things further. Tart and funky with a mint and citrusy acidity. Juicy with round malts adding gentle sweetness. Big lacto, light pedio and acetic notes with strong oak tannin lingering. The spicy, minty, earthy note with big bread and tannin is interesting if not wholly beneficial (reduces brightness, bogs down the palate). Otherwise very interesting experiment.

Bottle at HF. Pours a cloudy orange gold with small white head that lasts. The aroma is strong oak, citrus, mineral, funk, straw. Slick body, mineral, orange zest, barnyard, funk, straw, nice tartness, enjoyed this.

Bottle @ Cantillon Quintessence 2018. Pours lightly hazy golden with a fizzy white head. Notes of stonefruits, brett, oak, vinegar, lemon, bready estery notes.

At Quintessence 2018. Almost clear yellow golden color with no head. Yeasty and malty aroma, funky, wood, tart citrus, stone fruits too, some sweet notes like honey. Sweet and light to moderate acidic. Medium oily body with flat to soft carbonation.

Pours unclear blonde . Small white head. Smell is funky, oak, bit citrussy indeed. T is full, oak, tad glue like, mild oak aspect, reminding of the likes of vin jaune, almost. Intense. Absolutely great.

Quintessence. Cloudy yellow. Oak barrels, zest, herbs, funk. Medium, softly sour and tart, very fizzy carbonation, low fruit, citrus. Oil drowns the acidity, but the latter reappears after the palate. Good.

Light golden colour, white head. Aroma of citrus, orange, white wine, lime zest, cheese and yoghurt notes. Fruity sour flavour, tropical fruit and citrus. Quite astringent, grape skins, rather dry. Tart finish, lemon zest. Nice!
