During the fermentation of the first batch of this Abbey-style dubbel, the yeast «died» and was «resurrected» by brewer Chris Cashell. This beer is not unlike those that certain Belgian monks have been brewing since the 16th century. Made with five types of barley malt and lots of sugar, this beer is quite strong and flavorful, without being too sweet.

From a 12 oz can at home. Pours a clear copper with an off white head. Caramel nose. Flavors of butterscotch and citrus. Bitter finish.

Cask at GBBF 2015. It pours clear brown with a small beige head. The nose is earthy, toasty, bitter-sweet, raisin, sultana, spice and toffee. The taste is smooth, bitter-sweet, spicy, caramel, raisin, sultana, leather, charred wood and mild acidity with a dry, spiced finish. Medium+ body, fine carbonation and oily mouth-feel. A bit watery for what it is. Forgettable.

GBBF Day 1. Cask. Clear amber beer, few pale cream colour bubbles. Palate is light and semi dry, decent fine carbonation. Nice condition. Orange and orange peel, marmalade, trace of lemon. Little floralness before the light semi dry finish. Bright and tasty.

Cask gravity at GBBF 2015 day 1. Amber / copper coloured pour with a fleeting head. Aroma is tangy Apple, faint infection, varnish, wood. Flavour is berry, tangy hedgerow berry fruit. Light caramel. Palate is semi sweet, decent cask condition. Lingering tangy toffee apple. And caramel. Meh.

From cask. Pours cloudy orange to brown with a small tan head. Aroma is toasted malty, light caramelish. Bitter, light fruity, toasted malty. Bitter, dry and toasted into the finish.
