This too is the second iteration of a two year blend of Gin barrel fermented and aged spontaneous ale. After gracefully maturing in oak, we sampled and ultimately blended barrels that promoted a balanced acid, Gin, and fermentation character, with an eye to its ability to grow in character in bottle. For this version of The Duo, we take the final composition and then gently transfer it into tank with local Spruce tips foraged by our team. It rests there until the desired level of complexity is achieved, before finally being transferred yet again for bottling. The young tips provide an impression of macerated dark berries and citrus to round out the already complex Gin and fermentation notes of The Duo.

Bottle. Pours a hazy orange with medium frothy white head that lasts. The aroma is strong spruce, funk, oak, leather. Slick body, oak, funk, spruce, lingering dry finish, very good.

Bottle 750ml. @ MBCC'18 [ Red Session ]. - Mikkeller Beer Celebration Copenhagen 2018, Øksnehallen, Halmtorvet 11, 1700 København V, Danmark.[ As De Garde The Duo Spruce Tip Cuvée (Keeper's Blend) ].Unclear medium yellow colour with a average, frothy, good lacing, mostly lasting, off-white head. Aroma is moderate malty, pale malt, spruce, tart, sour, leather, cheese, herbal, funky, citric - lemony. Flavor is moderate sweet and acidic with a long duration, sour, dry, tart, cheese, lemony - citric, funky, brett - leather. Body is medium, texture is oily to watery, carbonation is soft. Tap@MBCC 2018 Red Session, Copenhagen - pours golden with white head. Tart fruity with some notes of citrus, light to medium acidic, notes of grapes, nuances of gin soaked wood, funky, medium body, touch of spruce into the finish.

MBCC 2018. Red. Pedal to the Metal session. Bottle. Light haze on this gold beer, small peach colour head. Light dry palate, decent fine minerally carbonation. Tangy gueuzey vibe, mild fruits. Modest spice. Dry finish brings mild acid burn. Okay.

Bottle pour at MBCC 2018 Red (session Trois), 11/05/18. Clear golden with a decent off white covering. Nose is fresh spruce, pissy notes, damp straw, lemon peel, wood must. Taste comprises funk, spruce, damp hay, grass, herbal bite, tangy fruits. Medium bodied, fine carbonation, semi drying close with a mellow pucker and acidic tingle. Decent enough sour.
