Eldon is our workhorse oaked ale that serves as the blank slate for many of our fruited beers including Tove, Val, and Claude – but we’ve never released it unadorned, until today. Composed of Fritz Pilsner and White Club Wheat malt from Skagit Valley Malting, Hallertau Mittelfrüh hops, and of course our mixed culture, Eldon shines the spotlight on the most important ingredient: time. 11 months in our foeder brings a soft, rounded mouthfeel and a pleasant acidity that creates the ideal canvas for our fruited offerings. We believe this celebration of simplicity deserved to be enjoyed on its own.

Smells fantastic as I'm pouring. Just dripping with rich, lovely, authentic, Dupont-like Sacch and gentle oak. Rustic grain with a healthy dose of honey and cracker-like character. Pear, apple, black pepper, with none of the unwanted stuff whatsoever (banana, clove, white pepper, bubble gum).
Flavor mimics the excellent nose nicely. Gentle but ample acidity balancing a chewy, wheat-like texture with good malt depth and attenuation. Complex, balanced, flavorful, Belgian saison that doesn't go overboard on the mixed culture or oak.

375mL bottle, pours a hazy golden with a medium white head. Aroma has plenty of neutral oak barrels, rustic farmhouse yeast, and dry toasted grains. Flavour is much the same, with plenty of oak barrels, farmhouse bugginess, and dry toasted grains. Very oaky, dry finish. Excellent.

Pale, hazy, thin head. Nice oaky aroma with the usual brett c goodness of Fair Isle. Mellow, oaky, medium tartness, complex brett and a bit of malt sweetness, and a slightly lemony note.

Bottle. Pours clear yellow gold, medium white head, good lacing. Aaron's is funky, bugs, oak, white grape. Flaky is light tart, light plus funk grapes and a hint of mint. Light body. A bit odd, but good
