Pop is a blend of extra pale beers brewed in March 2023, and a portion of 2024's Chuckleberry beer release. In last year's Chuckleberry beer, we included a small dry-hop to lift the fruit flavours. With the blending of Pop, we have taken this two steps futher and have made a very hoppy beer, with aromatics magnified by the fruit.

Spontaneous fermentation and maturation of all the base beers took place in white Burgundy and red Bordeaux barrels. The beer was then blended and dry-hopped with large amounts of whole-leaf Simcoe and Mosaic before bottling. The bottles have matured for five months before release, allowing the miriad of flavours to integrate.

The resulting beer has the character of both a spontaneously fermented fruit beer and a new world IPA. It presents as intensely fruit forward with juicy acidity, while remaining light and dry on the finish. Right now it is also vividly hop-forward. We're really looking forward to seeing how this one develops with longer bottle ageing too.

Bottle online from the source. Pours hazed deep pink with beige-ish foam. Aroma: tart red berries, funk, wine barrel hints. Taste: assertively tart/sharp, acidity. More tart/sharp berries & funk. Dry finish. Medium body with high carbonation. My love hate relationship with the chuckleberry continues

Bottle. HOTM. Fully hazed deep pink. Suds of mucky white. Not a looker. Nose has plenty of the promised hop. A bit weedy really. Behind there’s tart red berry and some of the wine barrel. Whiff of Mills funk. Taste is tart and dry with some acidity. Fairly light on the palate with quite high carbonation (there was a bit of a slow gush on opening). Tart fruit and hop bitterness to finish. It delivered overall but it’s not top tier Mills by some way.
