Tears of Saint Laurent is very special to us. To produce this beer we used our vintner’s practice for the first time. Moreover we add grapes from our own vineyards into this beer. Vineyards mean a lot. We work there during the whole year to harvest the best quality. Aroma and taste of the grapes (known for plum or plum jam tones) is developing very well thanks to southwest orientation and limestone riff beneath. Saint Laurent variety is very old and traditional. It is so old that the scientists were not able to trace the origin. The variety came into being as spontaneous crossbreed of Pinot Noir with some unknown variety most probably.
We use pale malts and unmated wheat when brew the base beer. In the open vessel we inoculate the wort and pump it into barrels afterwards. It is spontaneously fermented beer aged for months (sometimes more than a year). We do not use lab-derived yeast; just 100% local microflora. Beer is aged till autumn. Wine harvest is done manually; it is the most sensitive way for the vineyard. Before we add it into the beer we remove the stems. Now the beer is fermenting and aged for months again.
Thanks to spontaneous fermentation and using traditional vintner processes, the taste is rich. You can discover new layers with every other sip.
We recommend Tears of Saint Laurent for all skilled sour beer lovers. This speciality can be produced only right after the wine harvest.

Clear deep ruby to purple beer, no head. Aroma: funky, a bit of a sourish impression, red berries, a bit funky, quite some vinegar notes. MF: ok carbon, medium body. Taste: oh boy, wow, this is very bitter, unpleasant and medicinal kind of bitterness, mouth puckering and pretty bad, quite some tannins, man, I do not like this at all... Aftertaste: sourish, dry, spicy, earthy, some tobacco leaves and bitter still. What is this? Just the tannins from the grapes that make it so bitter?? Way too much for my liking.

Couleur acajou, col fin blanc-cassé.
Arôme offre un délicat parfum fruité des raisins - ici un côté fruit noir/baies avec en rétro-nasal un nez mettant en avant cette approche 'lambic' avec un rappel funk.
Palais est finement fruité/raisin avec un léger funk et qcq notes de sucre résiduel du fruit tout en ayant un certain mordant en fin de bouche - ici, acerbe et amer. Fleuri fruité arrive encore ne fin de bouche -

Small pink head over faintly veiled cyclamen-red beer. Sour cherries, sour grapes, red fruit, just some hints of wine. Delicate red:/pink fruitflavours, light rosé wine. Very fruity, refreshing flavours and a well-integrated flavourprofile. Spritzy, light to medium body. Maybe not the most outstanding of Jitka's beers, but definitely very attractive due to its balance and fruit. Thanks to the brewster!

Dark brownish red, no head to speak of but good carbonation. Smells oaky and grapey, not terrible sour. Taste is quite puckering, with a nice yet vague sweetness from the fruit. Pretty dry, loads of oak, nice amount of grape. Pretty good, refreshing!

Bottle. Lovely deep clear red with a brief pink head. Brooding wild aroma of red grapes, blackcurrants, apricots and their stones. Fairly light bodied. Not really slippery. Lowish carbonation is perfect for me. Dryish with moderate sourness and some red wine vinegar (not enough to be a negative for me). Woody, stemmy, skinny - Wonder what's Brett and what's grape skin? Not sure it's very lambic-like but it's good as its own thing.

330ml bottle. Wonderful, clear, purple-ish, ruby colour with small, frothy, fading, off-white to beige head. Vinous fruity aroma, notes of cherry, blue grapes, morello. Taste is dry, tart, vinous fruity, minimally woody and tangy, notes of cherry, morello, blue grapes, some citric acid, a touch of old lemon peel, nutmeg and cinnamon overtones; sour, fruit acidic finish. Watery-oily texture, minimally astringent palate, prickly carbonation. Very nice.
