Due to its authenticity, Earthmonk received as little sugar as possible during bottle conditioning in order to preserve all original aromas and flavours. This beer comes with little carbonation and a mini head. Is best served at cellar temperature and poured generously, meaning from a hight of approximately 15 to 20 CM, in an upright standing tulip glass. A big bubbled head will quickly make place for the Earthmonk coming alive!

Bottle. Pours a dark brown color with a small off-white head. Sour tasrt malty aroma with some vinous hints. Malty tasrt sour flavor with some earthy hints and hints of wood. Has a drytart finish with some vinous hints in th e aftertaste. Very nice.

Opaque. Very dark brown. Deeply both vinous & chocolate, woody, plummy, deep fruit...just rich. Tart, vinous, chewy toffee flavour with plum and fruitcake, balsamic, blackberry and alcohol. Complex, deep, vibrant, with chocolate notes.

Deep, black body. Fizzy off-white head. Aroma of wood, cherry, port, ’flemish sour’, ... Quite flat beer. Modrately sour, lightly sweet. Nice fruitiness. A very good flemish sour. I’d suggest to work on the carbonation to get a better flemish sour. But apparently the Struise gus wanted it to be somewhat flat. I can live with that. :)

Deep brown color, white head. Standard. Cherry pie, apples, chocolate brownies, caramel, sour nose. Incredible The mouth starts slightly sour with excellent depth apples, brownies, cherry pie, bready, caramel, hazelnut notes. Outstanding Finishes sour with a distinctive nut brownies taste lingering in the mouth. Jesus himself may have created this beer for only a few selected privledged inhabitants in the beer world.

Rerate from a 2008 bottle from Fin&Loz, thanks! Great deep nose, balsamic, berries, great acid. Mellow to light flat body. Dry fine acid on the palate, aged MonCheri. fruit bread, dusty roast retronaal. Great balance, great stuff. Old rating 9 3 9 4 18: Bottle, thanks Carlo! Wow, powewfull complex aroma - Vineous/Port, a bit like mulled wine, but fresher and not cloying, clay, berries, raisins a hint chocolate. Deep hazy brown, shortlived blanket head. Berries up-front, wet wood, licorice, lactic acid never becomes overpowering. Deep earthy clayish note towards the finish - wellchosen name indeed. Dry mouthfeel.Leathery and barnyardy exhaling. Brilliant - another top 50 in the making!

Cloudy reddish brown color, short off-white froth. Delicious aroma of grapes and hint of cherry, some oak wood, red wine, very subtle and good balanced. Taste is moderately sweet, very fruity. A new possible top50 candidate?

No head, but the smallest of transparant ring. Near black beer with hints at red-brown. Very nice lactic acid nose, with serious hints of earthy aromas and dry chocolate powder. Cocoa made from top quality "full" dark chocolate and raw milk - but without any sweetness. Slightly vinous. More sweet, but held in check by mild acids (lactic predominantly) in the taste. Fruity hints, and a punch of, again, chocolate. Earthy and leafy embellishments, but the integration is perfect. Retronasal, I get streaks of red wine and blue cheese, some fusels. As the brewers are very aware themselves, even if the aftertaste and palate are quite satisfactory, the beer suffers from a total absence of carbonation, refermentation having never started. In the Pajottenland, this would be called "Loerik". Who cares about refermentation? This is the perfect accompagnment for a blue veined cheese. Stilton and Earthmonk for me! Second, refermented version Good yellowish head. Nice headvy nose, with chocolate and lots of lactic acid. Nice, woody, lactic, yoghurt and a spicey taste as from sweet Spanish pepper coulis. Full bodied, quite a lot of acidbburn. Superb. Second version is even better (the nose excepted), and especially the palate - appearance not taken into account - has been much bettered. The marks given are an average of both versions
