Cutting Tiles is an exploratory series of Double IPAs featuring a range of aromatic single hop varietals brewed with raw local wildflower honey. This version is dosed with 100% Mosaic in all kettle, whirlpool and a massive dry hop addition. The honey keeps the body light and drinkable but provides an earthy backbone. Juicy, candied peach and nectarine up front backed up with a nuanced white wine on the nose that continues straight through in the flavor profile. Pillowy soft mouthfeel, with a restrained bitterness on the finish.

Bottleshare at Matteo’s. Big thanks to Matteo for this can. Almost clear gold beer, thin pale cream colour head. Palate is light, semi dry and has decent fine carbonation. Smooth malts, lightly sweet. Trace of malt cream. Smooth cooling piney hop. Mild hop skunk. Tropical fruits headlined by Mosaic blueberry. Mild hop spice on the smooth finish. Smooth and very drinkable but could be punchier in the hop department.

Tasting at Alex’s. 473ml, canned on 11-Oct-2016 (thx, Alex G.!). Pours a cloudy pale golden with a sediment and a white head. Aroma it tropical fruits, earthy. Taste is pretty the same with some slight booziness. Good one.

Cloudy orange color, but less filthy than other Trillium beers. A lot of candied fruits in the aroma, citrus fruits, some honey, some animal hops. Lean body, excellent malts, crackery, very moderate sweetness, and then some of the best hop extraction work out there, very orangey, candied fruits, hints of peaches, touch of passion fruit, pungent hops in the far final.

Can - Fruity citrus and tropical notes and pithy notes. Clearish gold with a small white head. Sweet and fruity with juicy citrus notes. Nice.

Can shared at the inaugural Matteo tasting, 31/10/2016. Huge thanks to Matteo for this one. A light hazed golden orange coloured pour with a small fading white head. Aroma is sweet floral honey, plastic, sharp tropical citrus. Flavour is composed of semi sweet, honey, Base grains, tangy lemon citrus, pineapple, lemon rind. Can at Matteo abode, big thanks to Matteo abode, 31/10/16. Hazed golden orange with a moderate off white cap. Nose is light pissoi, perfume, tangerine, grapefruit, straw, dank hop strokes. Taste comprises sticky trops, mandarin, peach, grapefruit, mango, pine. Medium bodied, fine carbonation, semi drying close with a hop boost. Solid DIPA.

Can shared at Casa Matteo - many thanks to the man himself. Pours clear gold with a creamy, white head. The nose has some citric hops, pithy grapefruit, dry pale malts. Light to medium sweet flavour with nice juicy citrus fruits, some tangerine, melon, a little pine. Medium bodied with fine to average carbonation. Lightly resinous in the finish, with some warmth, more juicy citrus, mellow pine. Lovely stuff.

Can from ClarkVV dated 10/11/16. Thanks! It pours a mostly clear golden orange color with a small, fizzy off white head. The aroma has lots of stinky dank, hints of sulfur and lots of peach. A little bit of blueberry and pineapple. The flavor is intensely hoppy with some spice, orange, dank, pineapple and peach. Medium spicy bitterness in the finish. Very full bodied with a hint of honey flavor and consistency. Overall, very enjoyable even though Mosaic isn’t my favorite hop.
