Cutting Tiles is an exploratory series of Double IPAs featuring a range of aromatic single hop varietals brewed with raw local wildflower honey. This version is dosed with 100% Mosaic in all kettle, whirlpool and a massive dry hop addition. The honey keeps the body light and drinkable but provides an earthy backbone. Juicy, candied peach and nectarine up front backed up with a nuanced white wine on the nose that continues straight through in the flavor profile. Pillowy soft mouthfeel, with a restrained bitterness on the finish.

Pours a very hazy, murky, pale peach color, with very little head, that dissipates immediately. Aroma is very floral, with grass and citrus, some tropical fruit. Flavor is very bitter upfront. Lots of citrus and plenty of hop bite. As per the usual with Trillium, it’s a topnotch brew all around.

[1/26/17] Draught at Beercraft in Rohnert Park. Cloudy yellow. Great aroma full of juicy fruity hops, very tropical, zesty. Flavor has faint sweetness, quite dry, with bitter fruity hops, a bit oniony and "green".

16oz can pours a muddy, dark orange with some lacing, white head. Nose has guava, some mango, orange peel, lightly floral, some grist too. Flavor has more fruit, guava, melon, mango, orange and tangerine, a little peach tea. Finishes dry, a little creamy. Maybe I have a can that’s a touch past due date. Good, but not great.

Fresh 16 oz. can in a trade with Chalumeaux. Bright yellow color, thick full lasting white head. Aroma is scallion, grass, and a lot of citrus. Oranges.

The citrus over-rides the grass or scallion notes in the flavor. The finish shows the only flaw in the entire beer. (Mild alcohol can be found). The mouthfeel is soft with a nice juicy citrus that gives it a high drinking quality. Also does show a certain amount of sweetness from the honey. The bitterness is on the lower end probably held at bay by the honey. Even with the noticeable alcohol, this is still pretty great!
