Through The Fields is a blend of foudre and barrel-aged mixed fermentation beers. Further aged on local elderberries before refermentation in the bottle. It is dry on the palate, with notes of earthy berries and a light, spritzy burgundy.

Bottle shared at craft beer junction bermondsey tasting. Many thanks to me, a pink plum, coloured pour with a a fine pink head. Aroma is airy raspberry, blackberry, leafy. Flavour is composed of semi sweet, blackberry. Bramble, raspberry, mellow funk, melow funk. Sharp and tangy.

This is exceptional. Doesn’t beat you over the head with acidity, funk or general complexity but it’s just damn drinkable. Some tart berries, mellow acidity, low funk, a little seedy bitterness. Lightly jammy, vinous. Gorgeous overall.

Keg at Marine Hotel, Stonehaven. It pours clear bright ludicrous red with a medium fluffy white head. The aroma is fresh, fragrant, funky, barnyard, elderberry, hibiscus, rose, juniper, vinous and lovely red berry. The taste is crisp, dry, snappy, bright tartness, acidity, minerality, grapefruit, red berry, elderberry, juniper, hibiscus, fragrant, floral, vinous and tactic twang with a tangy finish. Medium body and moderate carbonation. Lovely stuff. Best Burning Sky I've had for a while.

Tap. Crow. Mostly clear deep dark pinky red. Slim pink foam. Nose has fresh dark berry fruit. Touch of fruity yoghurt. Some vinous grapey barrel notes. Taste is lightly tart. Nice juicy fruit sweetness. Very clean and a little dry. Fruity tart finish. Good quaffer stays on the less complex side of a foudre job.
