Brewed exclusively with Edelweiss malt from Sugar Creek Malt, Lebanon, IN. This is a very special barley variety whose parents are two well-known Czech Moravian Hana landrace varieties. Originally bred outside of Vienna, Austria, after WWII it lost its production acres and had been forgotten since—until 2016, when Caleb Michalke (Owner/farmer/maltster) brought back a small sample of these barley seeds and started growing and malting this variety in Indiana.
The triple decoction mash provides toasted bread and a subtle biscuity sweetness. Hopped with a delicate blend of Czech Kazbek, Saaz, and Saaz Brillant to bring a soft herbal bitterness, complemented by floral notes and a hint of spice.

Canned 2/19, drunk 4/18/25.
Clear, very pale golden-brass-lime. Massive, well-retained, snow white head.
Rich, fresh herbs greet the nose as an heirloom-like yeast pumps out the mineral. Very slight flecks of honey on a canvas of dry biscuit and cracker. But it's not husky/tannic, under-malted. Clean and with the yeast really doing work, adding a ton of interesting aroma.
Rich herbs again in the mouth with baked sourdough and a light body, maybe somewhat anemic on the carbonation, lending a bit of a lazy/sluggish finish. But amply malted with interesting yeast and an exceedingly low bitterness. But there's enough pepper character right away to mostly balance. Really it's just the loose, soggy carbonation bringing things down.

Can from Tavour. Pours clear gold with a persistent creamy white head. Aroma of grass/spice/floral with a bit of bready support. Med body or so. Dry and reasonably bitter. Flavor is a little cracker with a nice amount of grass/spice. Tingles!

Very crisp and easy-drinking, with a bright, grainy sweetness underlined by lemon and a touch of sourdough bread followed by a dry floral finish. Effervescent carbonation might be a little too boisterous. Not bad.
