Inspired by trips to Pajottenland Lambic cafes this beer is a blend of several brews and barrels spontaneously fermented and aged for a year. The beer contains brews using 3 years old aged Fuggles and Cascade alongside wet hops from the 2023 harvest and freshly processed Cascade from the 2023 Crop.

Brewed on 100% solar power with absolute minimal intervention at every processing step allowing the ingredients to be presented as close to their natural taste within the beer. Bottle conditioned. Store horizontally below 15 degrees if you wish to mature this beer in bottle.

Bottle, thanks to David M. Color: Lightly hazy orange amber, thin off-white head. Aroma: Herbal, some wood, fruity notes. Taste: Herbal, floral, oak wood, hints of vanilla, some fruity plum and hints of red fruit. Some (old) hop. Subtle farm barn funk. Medium body, below average carbonation. Light tartness, lightly sweetish and bitter. A bit unbalanced.

Panda thanks to Cloin: Poured a murky hazy orange with a bubble ring. Aroma is woodsy, funky, fruity, I can smell the acidic taste that is coming, light vinous. Taste is tart bitterness, nice grain/cereal mix, barnyard funk, woodsy, not as acidic as I would have expected. Xolid beer!

Bottle via the online shop. Hazed ginger gold. Slim ring of white. First pour looked shite but once the bits has gone it tidied up nicely. Anyway. Nose has peach and pineapple skin. Some orange peel. Background woody notes. Touch of funk. Taste is lightly tart. Pretty juicy on the palate. Easy drinking as per this brewers MO. Nice vanilla-esque thing. Juicy tart finish. Great stuff.

Lively-ish pour leading to a hazed orange amber beer topped with a dirty off white swirl with some flotsam and jetsam, not a looker tbh.
Nose is funk, barnyard, damp cloth, dirty wood, pissy citric nip.
Taste comprises sharp citric zest, herb, hint of apricot, funk, straw, damp oak, farmyard bite.
Medium bodied, fine carbonation, drying close with a balanced acidic rise.
Solid sour.
