This beer uses an ancient and typically Belgian technique called ‘coupage’: the blend of a sour beer with a young ale. The sour beer we used is 2-year-old Lambic from Cantillon. The result is a 6.2% abv amber beer, with an appealing tartness and a deep, complex vinous character.

Bottle at Monk's: pours light copper with whitish head. Aroma is light basement funkiness, mellow light citrusy notes. Taste is earthy and very slightly sour. Interesting mix of lambic and not. Funky aftertaste.

Quintessence Blend 2025. Nice brew, soft acetic accents, a little biscuit, mild citric tang, nips of leather, cracker, low acidity. Pretty smooth. A soft funk and vanilla note. Delicate carb. Moreish. Rather drinkable. Nice depth.

Sample from bottle. A bit unclear yellow orangy color, white head. Aroma and flavor are lightly sour, hayish, barnyard. Relatively dry, pleasant sourness.

Bottle pour. Quintessence 25. From 330s I recall. Came with pork rillettes, of which I had many. Hazed pale amber. Thick swede. This I recall being a little on the sweet and rustic side.

Aroma: Sour fruits with yeast.
Flavour: Fruity sour with dry bitterness. Aftert is dry and sour with fruity sweetness.
Colour: Reddish amber with an offwhite head.

Bottle @ Cafe Albert. Pours slightly hazy yellow with a white head. Aroma of light sourness, light malt, yeast, barnyards, wood, hay. Flavor is sour, little malt, yeasty, wood, oak, barnyard, hay. Medium body, average to lively carbonatio, dry and light acidic finish. 081125

Lichtbruin bier met weinig schuim. Smaak is fruitig licht zuur met iets van druiven, citrus en wat rode wijn. Niet echt mijn stijl maar toch best goed.

Pours hazy amber with a minimal head. Funky, malty aroma. Taste is stone fruits, vinous, tart with some malt and caramel. Nice.
