Voici Anémone, un assemblage de Barleywine affiné pour une moyenne de 28 mois en barrique de bourbon Weller et Willett. Il s'agit d'une assemblage de Barleywines affinés pendant 30 et 26 mois en fût de bourbon. Vous y trouverez des notes intenses de bourbon, de fruits confits avec des notes riches de caramel, de prunes et de toffee. La texture est riche avec différents éléments de boite à cigare et de tabac foncé provenant du long élevage sous bois. Les saveurs sont dominées par des notes de bourbon et de fruits confits. Vous y verrez une certaine transition dans notre programme de Barleywine vers des assemblages moins marqués par des saveurs torréfiés et "foncées".

A dark reddish brown ale with a very thin brown head. In aroma, sweet fruity caramel malt with vinous notes, dark fruits, licorice, alcohol warmth, very nice. In mouth, a nice sweet fruity caramel malt with dark fruits, vinous character, vanilla, bourbon barrel notes, woody notes, very nice. Bottle at Chambly 2025.

750ml wax-topped bottle pouring a real, dark brown colour. Looks more like their Imperial Stout than your typical Barleywine. A nice mocha-coloured head, decent stay and a few lacing spots. Getting lots of chocolate, cacao notes with a touch of vanilla in the nose. Hints of dark fruits, like plums and some molasses. A smooth, silky mouthfeel with some good bitter-drying finish, but not overly. A nice warming alcoholic feel is felt. Feels like dark malts in the taste with the Bourbon giving a tad raisins, some more chocolate, plum and just a bit of oak-vanilla. This is quite delicious, but really feels more like Imperial Stout territory - which is fine with me. Was expecting the big-sweet hit, but got a nice warming darker brew.
